Ingredients

  • 1 cup fresh corn or frozen kernels
  • 2 eggs, beaten
  • 1/4 cup plus 1 tablespoon all purpose flour
  • 2 tablespoons coarse yellow cornmeal
  • 1/2 teaspoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Pinch cayenne pepper
  • Pinch grated nutmeg
  • Bacon drippings, for frying, or shortening

Directions

In a large bowl, combine all the ingredients. Add enough bacon drippings or shortening to a cast iron skillet to make 1/4-inch fat. Drop mixture by the tablespoon into hot skillet and cook 1 minute on each side or until golden brown.
