So easy, quick, and delicious. I can't wait to make it again but do a larger version for a brunch with friends. I cut the potaotes in small cubes, then added 1 Tabsp olive oil to the butter to brown them. Also at the end when I added the grated cheese, I also included 1 fresh chopped tomato. They just weren't done/tender enough for me. 2) Since I didn't have any jalapeno pepper, I diced half an habanero pepper. Aside from being what I had on hand, my husband and I like our food a little extra spicy. You will sweat, guaranteed. 3) I used habanero Pepper Jack cheese. Again, it was what I had on had. I didn't add any cheese for garnish, as it was bubbling at the top. There was definitely enough for four servings, but this was so good, we finished it off. I used meunster cheese (that's all I had in the house). Everything else was the same and it was really good! My kids even liked it. You could totally substitute any meat and cheese you want! Next time I'm going to try ham and pepper cheese. I really like this dish because you use one pan and get a complete meal!
