I used oat bran instead of wheat bran and no molasses (not crazy about the taste). I did add another 1/4 cup of brown sugar and used a bit less raisins & nuts. And I didn't have molasses, raisins, or walnuts.....so I used a bit of maple syrup instead of molasses and added some leftover frozen raspberries. Make sure the banana is pretty ripe or else the chunks will be hard. The raspberries turned out wonderfully in the recipe! I read the reviews first and as a result I opted to use 1/4 cup additional brown sugar since I didn't have molasses in the cupboard anyway. These were very moist and tasty. Hubby enjoyed them and he is not a bananna person at all. He said this one is a keeper! Although you might be blown away by the color and smell from the molasses, don't worry - you can taste it but it isn't overwhelming. I wouldn't alter the amounts on the zest, raisins, banans and nuts - these give it the needed texture and sweetness. They aren't terribly sweet, but I would hesitate to add more sugar.
