I used beef tenderloin sliced instead of sirloin and half and half instead of heavy cream and it was great. I also only had portabello mushrooms instead of cremini but like I said it's great. It was absolutely delicious. The color of the sauce is sort of greyish brown and so might not be so appealing visually - this might have been made worse by the fact that I used portobello mushrooms instead of cremini? My wife loved it even though she is not a mushroom fan. I tired this dish with other cheeses; I recommend you do this dish only with soft cheeses...Otherwise you would have wasted your time. I was a cook in a resturant when I was a young man, but thirty four years ago there wasn't much money to be made doing this so I persued another career, but I still love to and am the cook of the house (on the weekend). |
