That chili sauce is a BEAST! It's so good. And throwing the buns on a rack over the boiling dogs? Stupid-easy obvious Brilliance (that of course I never thought of...). We loved these things, and will make the chili sauce to take to cookouts all summer. GREAT stuff. Try it. Now. Do it. This was extremely salty, and as others have said, just sort of lacking flavor which is pretty surprising considering all of the ingredients. But, for some reason. There is no taste I thought it was because I used 98 percent lean instead of 80/20 but, that is not it. I really don't understand it. There is just no taste. I loved the sauce , the weiners and the addition of the mustard and cellery seasoning. I made a second batch of the meat sauce and froze it so we could have it again. Aside from the taste, I enjoyed not having the chili run all over the place and not stay where it's supposed to and having to use a fork to get all the chili. The texture for this was perfect. My wife and I really enjoyed this flavor packed recipe and she's very picky about her hot dog sauce. After trying it your way, we took some leftover sauce the next day and omitted the celery salt and yellow mustard and added a small amount of ketchup to the sauce. This acted as a binder for the sauce and added a southern kick to it. All the other great flavors still came through. Our kids didn't care for it too much (they much preferred the plain hot dogs)... but we enjoyed it. The topping was dryer than I expected, but definitely flavorful. I did not care for the cinnamon and allspice flavor in the meat sauce. I gave it two stars because it has never occured to me to steam the buns over the hot dogs(I usually heat them in the oven) that worked out great. We also mase the onion rings and they were freakin' awesome. I hope you have better luck with this recipe 'cause my husband and I hated it. The blend of the spices brought such an interesting flavor. Everyone smelled something different and it had a strong but pleasant aroma. The flavor was mild, not overpowering at all. I really enjoy a good chili/coney sauce on a dog and this one didn't make the grade. I made it exactly as Guy did, but found it soooo bland, which was surprising given the ingredients. He said it would be perfect for a preseason football game meal. He even wanted to HELP me prepare it! I am really surprised to see such low ratings on this recipe. It was soooo good. We made it exactly as Guy did, down to the steamed buns and celery salt. I understand now why he put the celery salt on at the end. It really topped off the flavor and complimented mustard perfectly. The steamed bun was key in this as well, and I will never eat a regular bun again after tasting them steamed. I think this is a perfect game meal (we also made the o-rings) and will make it again and again for a new take on hot dogs. If this is the way they taste up north than I have surely been missing out being a native Floridian! This recipe made me sooo happy! I know another RI transplant said it wasn't even close, but I beg to differ. This brought me right back home and I could have eaten a dozen. Full size, not traditional size! When my husband came home from work he stepped into the kitchen, took one whiff and his eyes rolled back in his head, he couldn't believe it. WELL DONE!!! As a Rhode Islander living in VA, I can only tell you that this is not a recipe that can be duplicated 100% successfully and Guy's recipe isn't even close to the real thing. VERY disappointing! Hot wieners are NOT hot dogs with meat sauce on top. They are a special wiener, in a special bun (with mustard on it), with a very special meat sauce, onions,and celery salt on top. At least Guy got the celery salt right. Rhode Islanders living out of the state OFTEN go home to purchase the wieners, the buns, and the sauce by the pounds; freeze the lot; and bring them back to their current homes.
