I had alot of leftover filling after stuffing the poblanos, so I used it to bake up some enchiladas. I used flour tortillas, canned enchilada sauce and a mixture of cheddar, jack cheese and mozzarella. I served canned refried beans with the cheeses melted on top of them as a side dish. I put the rest in an iron skillet, preheated to cook thoroughly, and treated it just like the peppers. My kids loved it.(even the picky eater) This is one I will definitely use again and again. I will definitely make this dish again. Because we had an abundance of homegrown tomatoes, I added a cup of them (seeded and chopped)and a few red pepper flakes. I also roasted my red pepper before adding to the dish. Very nice. This was my first "Guy Recipe" I look forward to trying more of his dishes. Thanks! The Poblano Suffed Peppers are Fantastic. My only comment is, if you get a-hold of some really spicey chorizo, you might not want to use the jalapeno peppers in the recipe...and perhaps substitute green chilis as we did. We love spicey but you still wan to be able to enjoy all the other flavors in the dish as well. Our only problem was our poblanos weren't big enough to hold enough of the mix so we just ate it off the plate, baby! Yum. I'd rate it more than 5 stars but that's all they'll give me. Oh...if you have left over rice mix...heat it up the next morning and toss with scrambled eggs and cheese! Yowza, it was great like that. I only used about 1/3 lb of shrimp and added it only to the 3 peppers. It would be good with chicken or just with the sausage. I had a lot of rice mixture left over, I just spooned it all around the peppers then topped with the cheese. I also used chicken thighs instead of shrimp, it worked just fine. I feel like a "young" cook again thanks to Guy's new and youthful approach to cooking. Fairly easy to make as well. Usually when I eat anything with chorizo in it I get hearburn which is shame but not with this recipe. Maybe the rice in the dish toned it down enough so it didn't bother me! UMMM!!!! So good! I will be making this many more times!! Wow!!! I didn't look and grabbed the hot. I used what I had on hand which was precooked shrimp and instant rice. I added the shrimp right before I was ready to broil and it did just fine. Next time I think I will make a tomato sauce to go with it. The cheese on top got a bit crunch even though I broiled it for a few minutes. My hubby and I were definately sweating bullets after this one lol!!! I tried to make it more healthy by using turkey chorizo and skipping on the cheese (I imagine in some places it is hard to find turkey chorizo, but I'm in Texas). It turned out very good, however b/c I used the "healthy" chorizo I had to add a little more oil prior to adding the rice and also at the end more spices (cumin, chili powder, and a little sea salt). Great recipe, could even omit the shrimp, it really stands on its own. Did follow the advice of another person and put the peppers flat in a standard pyrex pan and just spooned the filling over top. I did not use any shrimp, and used about 12 oz of chorizo. Perhaps I just didn't find the right kind of chorizo, but it came out sweet and spicy. I didn't care for the sweetness and found that it overpowered the overall flavor of the dish. I think next time I would try 1/2 lb spicy Italian sausage and 1/2 lb of shrimp. I always find a new and creative way to use the leftover filling. I have stuffed tomatoes, green peppers, and tortillas. I once even cut leftover refrigerated pie crust into circles, filled them with stuffing, and folded them over into empanadas. I love Guy's recipes! |
