The pork shredded with a fork. After a couple of hours of the initial start... I thought the smell of the Dijon was a little strong. I stirred everything together after 3-4 hours because I didn't see it blending on its own. The reason it was a stew for me was that I left and went hunting and didn't turn it off until a full 9 hours later. Very Good. Obviously easy to make. I didn't have the Sherry and forgot the bread crumbs and it tasted fabulous. I did increase the heat to High and cooked for about 7 hours. Very tender. I served it on a pile of mashed potatoes. Even the toddlers liked it! Way to go Sandra! I think it is a little sensitive for a slow cooker recipe in that the thickness of the pork chops and whether or not you sear the chops first really affects the time in the cooker. If you sear them or have thinner chops, reduce the time in the crock pot. Also, creamy mashed potato is a good substitute for the potato soup. I had a lot of leftover veggies so I heated them up the next day with some milk and some white wine, zapped it with the immersion blender and had a very tasty soup for lunch. I don't know what happened with the people that said the pork was dry -- mine was tender and very flavorful. I used a rosemary seasoning b/c I didn't have herbs d'provence. I did use fresh carrots instead of frozen so they wouldn't get mushy. Other than that, I followed the recipe as written. Can't wait to make this one again. As many people mentioned, the pork chops were way overcooked, and I expected the soup sauce to integrate more with the vegetables to make a nice gravy. I also cut the Dijon mustard down to 2 Tb. and am glad I did. My husband likes that flavor, so it worked out well. If you're not a fan of such strong herbs, this recipe is not for you. Also, I didn't add the cannellini beans until the last two hours and they turned out just fine; not too mushy like some of the other reviews stated. Overall, the meat was fairly tender and moist. I questioned the use of the potato soup until I saw the picture...red potatos are in the picture. I added them the second time I made the meal. Added fresh carrots instead of frozen...alas not as much mush...and GARLIC for crying out loud.... and finally slow down the cooking process...four hours is high...drop it down to six hours at take it out after five hours, at a lower heat...the pork won't dry out. I needed something quick, filling, easy, yet nutritious for my hungry famiy. My pork chops were so big I had to use my 6 qt. slow cooker, so I used an additional half can of soup with spices. Even though it may look like it doesn't have enough liquid when you layer all of the ingredients, don't add any extra water or stock. It will make more liquid as it cooks. My friends and family have raved about it. The last couple of times, I've played around with the recipe to cater to different guests. Things you might try: cut the Herbs de Provence by a teaspoon on the chops; if you're not a Dijon fan, cut that back by a tablespoon -- it's a strong flavor; stewed tomatoes work well in place of plain; and you can always dredge the chops in flour, the herbs, and S&P, and then brown them before adding. This is really a great recipe though just as it was written --something different and special.
