Fortunately, I read enough of the reviews to see a few that mentioned that the recipe is too salty. So, I reduced the salt to one tablespoon--still too much salt for us. During the cooking process, I poured off some of the liquid and added water to lessen the saltiness. This is a perfect dish to serve to guests. I did not have orange juice and substituted mango juice. Also, I recommend searing both sides of the chops prior to adding juices and turning down to simmer to seal in seasoning rub. I only marinated for 30 minutes and the taste was still great so the preparation and cook time was only 45 minutes. It was easier than putting them on the grill. I also used 1 lb. of potatoes. I think the 1 medium is an error. Everyone loved it. They continued to eat even when they were full. They just couldn't stop. I also used what steak was on sale. But DO NOT over cook the steak, medium to medium rare is so tastey and not tough. They had such wonderful flavor and color, especially combined with the potatoes. I used boneless pork chops and cut the Kosher salt in half. It was still too salty for my taste, so I'll cut it back further next time. But this wasn't enough to rate it less than 5 stars. Definitely a keeper for my recipe box! As for the negative reviews, I think you either like these bold flavors or you don't - there's no in between. My husband has eaten Cuban food at several DC restaurants and said it tasted just like one of the dishes he would order! But these recipe first is not cuban, doesn't taste like and worst than that is TOO SALTY. I really don't know why we make the impression that in the caribbean we used a lot of salt and spices, we do but not to the extreme. We like to cook with spices, but we usually like to taste the true flavor of the meat and the spices. I'm so sorry if it sounds rude in any way. But really, I want to help you understand the true Cuban Cuisine. To let you know an example, we boil sometimes the meat so it doesn't taste that salty. And instead of using a pan we like more grilling them.
