Really Really Good!! 12/15/2007 at 04:22pm User: Deb from San Francisco, CA User Rating: I've made this recipe 3 or 4 times now and getting ready to make it again and just read through some of the other reviews which complain about the quantities etc. So...for those of you who are looking to make this awesome recipe, it's true, I think there are a few modifications you need to make, but it's well worth effort. 1.) Yes, I don't know what kind of lasagna pan he was using, but you don't need 2 pounds of lasagna noodles...one package is fine...but i use two anyway as I always end up tearing some of the noodles and want to make sure I have enough. And since they are probably the cheapest thing to buy for this recipe...I don't sweat it. 2.) The amount of sausage is fine...not too much at all...so no worries there. I thought it could actually take a bit more. 3.) The pepperoni...I bought 2 packages of the pre-sliced which was plenty...probably 16 oz altogether...which of course is about 2 cups. 4.) The sauce for this recipe is THE BEST...and you have to make it from scratch...don't take the easy way out and put on jar sauce...you will love this...BUT...the lasagna needs more than the recipe...so I would double the recipe plus I always add a can of San Marzano tomatoes to the sauce for a little extra somethin' somethin'. 5.) It takes way longer than you think. And i wouldn't call it Easy...due to the amount of prep required...but it is sooo good and your guests will love it. Truly. I love to put a twist on things as my palette gets very bored, and this lasagna was perfect! My fiance saw this lasagna on your show and moxied it for me to make. (Go figure!) LOL I varied the recipe just a bit, I used a jarred sauce (Prego Garlic & Italian Sausage and just added some fresh basil...) The lasagna turned out perfect! It was sooooo easy to make, I am 25 years old and I am not the best at cooking, but this was so easy and so delicious! I have made this twice already in the past week! Once for us originally, and then again for a Halloween party last night and 2 huge pans of it were swiped up faster then you can say Pepperoni. I made it for the first time 3 weeks ago when we had company for dinner and between 5 of us the entire HUGE pan was gone! I did take some short cuts since I have a little one running around but I cannot imagine the longer way would result in any better results. I used a very good quality jarred tomoato sauce and I added a small can tomoto paste as well as an additional can of stewed tomatoes and the sauce amount was perfect. I also only used one box of lasagne and I didn't even use all of that. I used cottage cheese instead of ricotta and I layered in my own preferred method. I make a great traditional lasagne but my husband now prefers this one over my traditional one. Also, for those of you who question whether or not to fry the pepeeroni - do it! It is an essential part of the recipe and creates a nice texture to the dish. Of course, you may have to fry extra as my husband sat there and popped them in his mouth as they came out of the pan. My husband just raved about it, & my son had 3 helpings that night. Guess he liked it too. I have never fried pepperoni before, but wow, what a fantastic aroma there was in my kitchen. I added milk and sugar to the spaghetti sauce. I know alittle weird but good. I took the sausage out of its casing. I follwed the instructions the rest if the way. I drain pepperoni grease, too greasy. Major heartburn. That is why I added milk, and sugar. I let sauce sit for about 1/2 hour. I also used canned crushed,pured tomtaoes. I did not see the added benifit in frying the pepperoni ahead of time and wouldn't bother with that step again. I would recommend buying the pepperoni on the log and slicing it yourself. You get a much better taste that way. I liked the layering method instead of mixing everything in with the ricotta. This lasagna was ok, but not the best I ever made. There was nice sauce on the plate and that was good to slop up This was very very good and very easy and tasted so good your should serve this to guests and relatives. As for greasy; the point of frying it is to de-grease it somewhat, and then drain on paper towels. The sausage also was cooked and drained. For you folks who think it was too much meat and fat; try watching Elie Krieger or Robin Miller; probably more what you are looking for. Keep up the bold meaty dishes coming, Guy, and ignore the base negative nerds sounding off here. Everyone should know enough about Guy Fiere and his style to know he is about regular, bold "guy" food; he won the competition b/c some of us like our fat in our meals and count on eating meat regularly, and are not afraid of strong flavors. I am tired of getting hash browns with no onions, b/c "some people" don't like onions. Grease and meat are part of lasagna, unless you want to go vegetarian, but I personally don't and neither do a large segment of the viewing audience. Rock on GUY!! First of all, I almost always follow the recipe and make no modifications. Two POUNDS of noodles and two POUNDS of sausage is just way too much---but I made it anyway.
