It was bold, and fresh, expecially when combined with the mango salsa. The rice offerred with the combo worked well as a base. Most of my friends considered the heat to be a little 'pronounced' even among compliments. I decided to drizzle a little honey and brown sugar in the dipping sauce to counter this. This is a fantastic recipe. Consider it a 'Jerked'spice arrangement that captures the kick and is easy to eat with a group of friends. Either on vacation at the beach or just wishing, Food Network 'brought it' with this one! My chicken thighs only marinated for about 5 hours and they were still flavorful. I wasn't expecting to enjoy the mango salsa - but it was a great compliment to the entire dinner and I would definitely make it again. They key is that the ingredients were already in my kitchen, it was an easy meal to make and clean up, and it was delicious to boot! Great job Guy! I recommend as with any recipe add certain spices to taste rather than following the amounts exactly as in the recipe. I cut the salt down in the rice and added more cilantro. In the chicken marinade I cut the amount of pepper, so that my kids could enjoy it too! It was great! Loved the mix of flavors. I tweeked it a bit by not adding allspice to the marinade, but adding some honey, and using some chicken breast and some chicken thighs. Also, I added freshly sqeezed orange juice to the liquid for the rice instead of chicken stock. This made for a lighter dish, which complimented the the other dishes. Unfortunately, we could not get scotch bonnet here, so we used two Jalapeno---not enough spice. But, maybe OK for those who thought it was too hot with the scotch. Since it is summer, I think I will try a habanero next time. The marinade was too spicy for me as a dipping sauce, but the BF loved it! The rice was the bomb and the salsa was an excellent cooler for the mouth. I'm happy that it's up in full now. In any event, I loved the flavor. I've only ever done jerked chicken once before, but this was a taste sensation. My market didn't have scotch bonnets so I had to use a milder pepper, but perhaps less heat let more of the other flavors shine through. Had it with everything else on the show...truly delicious!
