I love Thai food anyway, but if you're not particularly fond of Thai cuisine, don't get scared by the red curry paste. Unless you REALLY don't like anything spicy at ALL -- it isn't too much. The only thing I did differently was to thicken the broth a bit with corn flour and additional chicken broth. Also, any type of "thick, white fish" works -- I used Cod because that was available at the market. Try this recipe -- you won't be sorry! I used tilapia instead of halibut due to the cost difference. I also stirred in some corn starch into some of the left over canned chicken broth which I then added to the sauce in order to thicken it up to my desired consistancy. I cut back by 1/2 tsp on the curry paste and only used 1/4 cup of cilantro leaves. I did this after reading the reviews. I would not do this again. Even though my husband and mother throught it was GREAT. I think it needed more spice. Next time I will follow the recipe to the letter. I also added some shrimp during the last two minutes of cooking. I will definitely make this meal again. I will also use it for company. I also only had reg. chicken broth (not low sodium) and it had just the right amount of seasoning. To make the sauce a tad thicker I let it reduce down by simmering it for about 12 minutes. There is nothing better than a delicious meal that you can get on the table in less than 30 minutes. I've had good luck substituting green curry paste (although I like the red better). Also, with a slightly longer cooking time this works with boneless, skinless chicken breast as well. Once you try it, I'm sure it will be a favorite of yours as well. The ingredients were pretty simple and most I had on hand. The flovors, smells and appearance were great. The authenticiy of the dish was right on. It was really very easy to prepare but looked far more complex when served. In my husband's words when I served it, "This looks like a $20 dish at a Thai restaurant." I served the fish as recommended, in a bowl over the spinach with the broth ladeled over it. Instead of brown rice I made whole wheat couscous and served it in a small side bowl with a little drizzle of the broth and a couple of sliced green onions. Both bowls and spoons were from an oriental serving set I have so it gave it that much more flair. I highly recommend anyone wanting to try something different and new to prepare this recipe. As for others who say the sauce was thin, I thought it was supposed to be that way. It is called a broth - we actually served it in soup bowls. And I found the rice absorbed the broth which was delicious. I actually used jasmine rice which was great! Anyway, if you like spicy, you'll love this! The red curry in this recipe is so overpowering that you don't taste the coconut milk, cilantro, lime, or any other flavor. With halibut being so very expensive right now, I would choose a recipe that will not overpower the fish's natural "sweetness." We had quite a bit leftoever and all that wonderful fish is going to waste. It was very good, but seemed to be lacking something. I fixed that with the leftovers. I mixed everything together (scallops, sauce, spinach and rice), added the rest of the can of lite coconut milk, and some tamarind paste. BINGO ? that really did it. The sauce was bland. When I made this a second time I used full-fat coconut milk, an extra 2 teaspoons of curry and a let it reduce twice as lond. These changes helped bring flavor to the dish. I recommend using a little bottled fish sauce (sold in chinese markets) as well as some red chili sauce to gice it a little more Thai flavor. Don't know which one is hotter but this was pretty spicy! My husband said it was almost too hot and spicy for him but I loved it. I've stocked up on red curry and shallots but think I will make it again with the tilapia. It was delicious and so much less expensive. Can't wait to have friends over so I can serve it to them, too.
