The sauce also got dry pretty easily, so I would suggest substituting some of the feta with milk or something mild and creamy. I halved the recipe for two of us, and added some grilled zucchini to it. I also added about 1/4 tsp of crushed red pepper flakes, and about 1/2 tsp of salt. So quick and easy, simple dish using a few pantry staples. I used a little bit extra garlic (we like garlic in this house). Delicious. some of the reviews here have said it was too salty because of the feta. I thought it tasted great but feta can taste different depending where it was produced. Ask the cheese man at your grocer for a sample before you buy. Also don't forget to add pasta water to the sauce. It will definitely stick to the pasta without a problem by adding the starchy water. It is quick to make and tastes great. It is a fairly guilt-free way to eat pasta. I typically use a little less onion than what the recipe calls for, and I found that adding some of the pasta water to the sauce really helps smooth it out. For those who says the balance is off, I'm wondering what brand of Feta you used. All Feta is not equal. Lots of countries make feta. Comparatively, French Feta is milder for example than Greek or Bulgarian Feta, etc. There's also an issue of how much goat's milk and how much sheep's milk was used in one or another brand. You should taste the cheese before using it so that you know you like one particular feta cheese over another. Skip the one that is too bland for your taste and I think you'll enjoy this recipe. Unfortunately, the sauce was very overpowering in regards to the feta. I know that the feta is supposed to be a strong flavor component but I feel like it was just too much of feta and not enough red pepper. My husband and I ended up not eating most of it. I'm going to take the leftovers and try adding the grilled chicken that someone suggested and maybe an extra red pepper to mix into the sauce. Hopefully, then it'll become a salvagable meal. I use fusilli because the sauce clings better and I roast my own peppers. I use whatever pepper I have in my fridge. I also used some boursin cheese because I was low on feta.
