I would have rated it lower, however, the party I took it too, several really liked it. I prefer Giada's Chicken Tetrazzini. It has the wow factor and sets up great. DELICOUS! husband and his friend RAVED about this veggie lasagna! I followed the recipe exactly, although I did buy grilled chicken breasts from the store to save some time. My family loved it - the only thing I will do differently next time is use less salt, as the Parmesan is already fairly salty. For the reviewer whose lasagna didn't hold together well, she may not have let it sit for the required 20 minutes after taking it out of the oven. I?m not a huge fan of the heavy lasagnas normally found in Italian restaurants or the frozen ones from the grocery, so this is the PERFECT alternative! The only down side is that it took a bit longer to prepare than I was anticipating. We halved the recipe bc there were only 2 people eating, but we added 1 fresh zucchini and one fresh yellow squash and kept the full amount of spinach?mmm! Amazing! We also tossed around the idea of using mozzarella cheese instead of so much parmesan to lower the sodium and increase the creaminess! Also, watch out for Emeril's ESSENCE Creole Seasoning?it packs quite a punch! This recipe stands on its own - no need for tweaking. We didn't find it too rich at all and were pleased to know that the creamy sauce base was milk rather than cream. Definitely a keeper. I was intrigued because it wasn't made with a red sauce. I didn't know you could do that! I stayed true to the recipe (it was fairly easy) but I couldn't leave it alone. I added glops of pesto throughout the lasagna and kicked it up another notch with creole seasoning when I served it. The family gave it rave reviews.
