I made this bisque to bring to a clambake in Lakewood, Ohio. While the bake cooked, we all enjoyed snakes,dips and my shrimp bisque was the biggest hit of all the appetizers . . . so good and just perfect according to my cousin who threw the clambake. I told folks that next time perhaps I would use a little heavy cream and all the fans of the bisque at the clambake said "NO,don't change a thing - it was perfect the way it was!" D E L I C I O U S!!

Ina has a knack for making fabulous food easy to prepare. This recipe is wonderful because the stock can be made in advance and frozen. The bisque itself is fairly uncomplicated and absolutely wonderful! The recipe is also flexible for crab and lobster bisque.

I love shrimp Bisque and order it whenever we travel. I have had it all over the world and this ranks with the best of them. Easy to make and delisious. I have made it with lobster with great success. I'll definitely serve it in Cape Cod this summer. Thanks for a great recipe/

This recipe is good but could be better. It didn't have the depth of flavor, creaminess or texture I wanted. I added more tomato paste, more sherry and finally a tablespoon of brown sugar, which brought out the sweetness of the shrimp. I would puree the shrimp mixture until smooth and replace some of the half and half with cream. Because it is a relatively easy, I think it will be fun to experiment with it until it is just the way I like it! I like the lime zest idea someone suggested -- I'll try it.

I used chicken stock (with the shrimp shells cooked in for flavor) and regular salt. The first time I didn't use cognac. The second time I did. Both times it turned out wonderful. A really nice warm bisque for a cold day. Great flavor. This was my first attempt at cooking a recipe from tv and I was pleased. Thanks!

This soup has a wonderful taste. Rich and creamy without being overly heavy. I served it in individual soup crocks that I had put puffed pastry dough and baked them in the oven. It was tasty and made a great presentation. I was not able to find fish stock and did not have the ingredients to make my own. I finally found a product called "Better Than Boullion" lobster base. It was even hard to find in the lobster flavor. It worked out wonderfully. Because the lobster base had lots of salt, I reduced the amount the recipe calls for.

This was so good. Having all the ingredients prepared would make it much easier. Didn't have cognac, so we used some white wine and it was still very delilcious. Also 2 cups of leeks seemed like a lot so we cut it by 1/2. Would definitly make it again.

What a wonderful soup. My brother was over and I served this soup. It's not often my brother wants a recipe, but he wanted this one. I took the advise of another review and added the zest of 1/2 a lime. It made it even better. Also this recipe made the house smell sexy. I think my wife needs me now!! See ya...

This is a great recipe - I made it with 1 1/2 C whole milk and 1/2 C of half & half.....just to lose a few of the calories and it was still fabulously rich and delicious.

I made this after seeing Ina prepare it on TV; and with the temps dropping thought it would be a nice winter dish. I didn't have any seafood stock, so I just used chicken and added the shrimp shells for flavor I also doubled the amount of sherry due to no cognac. It was simply delish. My finance finished 3 bowls. Luckily I stashed some in the freezer before he got to it all!!

This soup got rave reviews for my family. But it was much better the second time around. After it was refrigerated and reheated it was incredible. I used the seafood stock and simmered the shrimp shells in it like the recipe said and the shrimp flavor was quite strong so I cut it with a little extra cream and grated parmesan cheese. I also added extra heat with a few pinches of crushed red pepper instead of the one pinch cayenne. Overall a great recipe!!!!!

Loved the idea, but found it to be bland in the end. I found the taste of cognac to be a little overwhelming, and something was needed to round up the taste. I added about a teaspoon of lime zest and WOW, what a difference! After the lime zest, I will definitely give it five stars.

The first ina reecipe I didn't like. Followed the recipe exactly, but had to use headless shrimp. The bisque came out very bland, and I had to add more salt, pepper, and cayenne. Didn't taste "shrimpy" at all until the next day (leftovers). Would not make again.

the recipe is beyond fantastic. sweet shrimp, leeks which don't give that onion "bite", a full broth that is not too heavy or dense. Ina, you hit the mark on this one. i too did not have enough seafood broth, so substituted half clam juice and half vegetarian vegetable broth. i otherwise followed to the T. i served this with crusty oat bran french bread. you will not be disappointed..

I made this tonight and it turned out phenomenal! I absolutely love this recipe. It is relatively simple compared to other shrimp bisque recipes I have seen and so tasty. I bought an extra half pould of shrimp to reserve for presentation. After I added the shrimp to the food processor, I cooked the reserved shrimp in the same pan (before you make the roux) and set them aside to place whole on top of the soup when served. The dish is relatively affordable, the biggest expense being the shrimp, but it is also very impressive. The cognac and sherry can add to the cost if you don't have them, but once you buy them, they last a long time and you can make several other dishes with them. Because of the cost of the cognac, I just bought a little bottle that is about enough for two recipes of the bisque. Definitely worth the effort, and it wasn't even that hard. I made it while watching my 2 1/2 year old and 2 month old son....so it can't be that difficult! Enjoy, and thanks for ANOTHER great recipe, Ina!

I made this for my husband and me and we enjoyed it. So we invited friends for a soup supper and served the bisque. Everyone wanted the recipe! One lady said they had something similar at a restaurant on the coast and it was not nearly as tasty. Ina has the best recipes.

This was an amazingly easy soup to construct and, the flavor was superb. I tweeked it a bit, adding a mirapoix first (substitute onion for leeks)and hand chopped the cooked shrimp meat mixture instead of using a food processor (why dirty another bowl)? Don't sacrafice flavor for less calories---use 1/2 and 1/2. Next time I will add some rough chopped cooked lobster meat to each soup bowl. Yum! Oh, I also grilled up sliced french bread, dipped in olive oil and threw a pinch of sea salt on top before serving. Tasty.

I fixed this just as the temps dropped below freezing at night on the OBX, great winter dish. It was relatively easy for such a fancy dish, and it tasted delish. Although I used frozen shrimp, and I think to truly do it justice fresh shrimp are needed. Very rich though, needs that nice crusty baguette to dip in it to cut the richness. I added a couple sprigs of thyme.

This time I decided to make a recipe with all ingredients preassembled, chopped, measured and set aside. It made this soup a lot easier. I used raw, deveined shrimp but the store only it with tails, not shells. However, boiling the tails with the stock (I used vegetable stock) was very good. I would recommend making sure you use enough salt. I also added a dash of fresh lemon and extra ground black pepper to the serving bowl.

Oh my, this was delicious! I made it pretty much by the recipe, the only change being I used chicken stock instead of seafood stock, but I boiled the shells in the stock as directed. We had the bisque for Sunday night supper and there was plenty left which I was going to share with friends, but my husband wouldn't let the leftovers leave the house - he wanted it all for himself.

I made a few changes in the recipe based on what was in my cupboard. I made this as a seafood bisque using crab, shrimp and scallops. I didn't have the brandy and so added stock instead and added carrot and celery to the onion/shrimp mixture. The tomato paste turns the soup a lovely pink shrimp color. This was a delightful bisque. Very easy to do and ended up being an elegant first course.

This turned out perfect!!! I have been looking for a wonderful shrimp bisque recipe, that was easy. Finding seafood stock can be a challenge if you have not made your own. Luckily a young woman who works at the supermarket where I shop found some for me. " Glace de Fruits de Mer Gold", made by a company called "More Than Gourmet". It is a concentrated seafood stock,, a really good one. The only change I made was to use all sherry because I had no cognac.

I watched the show this morning and decided to try it since I had shrimp in the freezer. It was pretty simple to make and tastes wonderful! I couldn't find fish stock so I used "lobster boullion" instead and still simmered the shrimp shells in it. I'll be making this again at at girls day very soon!

I have been searching for a shrimp bisque that was as good as I'd had at a local restaurant. I made this bisque after seeing Ina prepare it on t.v. It was easy and absolutely wonderful. Even with a few substitutions (I didn't have the fish stock--used chicken and vegetable; and didn't use cognac, but doubled the amount of sherry) it had that unmistakeably rich, deep flavor. Simmering the shells in the stock really was a key step that "made" the dish. I will definitely be making this again soon.

I made this recipe after I saw it in her book, "The Barefoot Contessa at Home." I used the shrimp stock recipe from the book. If you like shrimp, you will love this recipe. It is absolutely delicious.
