I also thought I would save calories and forget the graham cracker crust - just served as "double chocolate homemade pudding". Delicious warm (as I was sampling) and good enough to serve to guests cold. I was so excited to make this pie for my boyfriend, who is also trying to lose weight as well as myself, and promised him I would make something light. BUT one eight of this pie is 17 grams of fat...half of which are saturated fats. That's only 1/8 too...I know I'd eventually eat more than that. I mean, I love cutting out fattening ingredients if its well-worth it but I don't wanna eat a pie like that and still feel guilty. 17 grams of fat seems kinda standard for some pies and cakes that aren't light to begin with and taste better....like the marshmallow devils food cake that Entenmann's makes. If I'm gonna take the time to make something home-made and try to cut out fat, I wanna definitely cut out more fat than this. I used skim milk instead of just low-fat, and didn't make any whipped cream, and it was just amazing - the crust was delicious, and the filling was SO rich with deep chocolate flavor. That's reserved for my spouse. But this looked so easy, I decided to try it. I did use a pre-made graham cracker crust. I followed the rest of the recipe and it turned out wonderful. Oh sooooo yummy. My spouse was very impressed. I did also use the canned whipped cream. I highly recommend this for the non-bakers like me. Homemade from scratch is some better, but I'd like to see the difference in ingredients between this recipe and the boxed because the taste, in my opinion, is similar with the exception of the more intense chocolate taste. The only thing I did different from hers is sub 1 cup of coffee for milk. It made the chocolate stronger tasting. I also used skim milk and cool whip. I didn't have any problems with the gelatin. The first time I made it I used 1% milk as called for in the recipe and made it exactly as written. I was proud to bring it to my niece's house along with dinner as she had just lost a baby. The second time I made it I had to use rice milk because my son is milk allergic and it came out just as beautiful. And I didn't add the whipped cream to it. Easy and elegant. To the "anonymous" reviewer (1/15/07) who said it wasn't healthy, get educated, you probably overeat anyway, you wouldn't understand healthy eating. Everything in moderation, "usually, sometimes, rarely" is Ellie's motto. She isn't calling for 24 egg yolks like another chef did in a chocolate pudding recipe on Food Network. This is a healthy version of a decadent dessert! Like Ellie says, "I'll take a little bit of real whipped cream over chemical-laden nonfat whipped topping any day." I also had a hard time getting the slices out of the pan. It may be because I followed her method (against my better judgment) for the gelatin. A lot clumped up. Usually recipes call for sprinkling it over cold water, then adding it to the hot. I would recommend that. Look for graham crackers without trans fat (not all of them are). Like other's posted, this was the first time I made pudding from scratch. I used Dark Cocoa which made it super rich. Only problem, the crust, I will double the receipe next time as it wasn't think enough and left little holes on the bottom of the pie plate. I didn't have bittersweet chocolate on hand, so I substituted dark instead. I thought it tasted fine. Perhaps the reviewer didn't actually read the quantities carefully: 2 tablespoons of butter is excessive? Not in the least. And the heavy cream is an optional garnish, which I omitted. I made this over the weekend with three small children, one of whom is an early blooming chocoholic, and not only is the recipe easy enough that children can help, it's also DELICIOUS enough that they don't notice it's "health food." This is one of the best puddings I've ever had/made, all calorie and fat discussion aside. Who would make Jello pudding again if they tried this recipe once? Of course, eating too much butter and heavy cream is unhealthy. However, Ellie's message and the message of every qualified nutritionist/dietitian today is that no food should be completely eliminated from an individual's diet. Rather, moderation is key! When you compare Ellie's dessert recipes to their traditional counterparts, there is always a noticeable difference in fat and Calories! Obviously, it goes without saying that you can't eat the whole pie in one sitting as part of a healthy diet, but a slice now and then is perfectly acceptable. And I thought that Ellie's pie was a tasty indulgence! It was fairly easy to make, too. One of my husband's favorite pies is Marie Callendar's Chocolate Cream Pie and he said this was just as good, if not better. As to the reviewer who talked about how bad this dessert is for you, dessert is by its nature unhealthy. However, this recipe is a much healthier version of pudding pie (1% milk, only a "dollop" of whipped cream & 2 tblsp of butter for the whole crust!), but with all the wonderful flavor!
