Sorry - but, this is not good! 12/31/2007 at 03:29pm User: Catherine from Humble, TX User Rating: I usually love cucumbers. I peel them and eat them just like that. I thought this recipe may be a nice change. Boy was I wrong. It was way too salty!! I still have the salt taste in my mouth - yuck! I followed the directions exactly - maybe it would be better with less salt. Don't know - I threw this away and don't plan to make it again. Tasty 08/20/2007 at 11:19pm User: Anonymous User Rating: I didn't have sherry or white wine vinegar so I used rice vinegar and omitted the sugar. It's great. I look forward to trying it the way it was written. Flavorful, healthy and no one is the wiser! 08/19/2007 at 06:30pm User: Rhonda from Austell, GA User Rating: How do you give a BBQ without anyone knowing that you are dieting? This quick and simple dish is wonderful which everyone enjoyed as a change from mayo-laden recipes. Try it once and you will have it always! Elle Kreiger cucmber salad 08/09/2007 at 10:32pm User: Julie from Colorado Springs, CO User Rating: Delicious! Easy! Don't ever get rid of Elle Kreiger! Everything she puts out is good! Simple and yummy! 08/07/2007 at 06:03pm User: Penny from Richmond, IN User Rating: This is a simple and great tasting summer salad. I chopped the onions finely as I am not a big onion fan. I also went a little light on the dill as I was afraid of putting too much. Excellent! just the ticket 07/17/2007 at 03:19pm User: Lisa from Arlington, MA User Rating: easy healthy and well presented fresh dill if you can get it! So simple 06/26/2007 at 05:49pm User: sidra from Mocksville, NC User Rating: I found this salad to be easy and delicious. My husband would've preferred the onion diced, but I liked it just the way it is. SOOOO Delicious! 06/20/2007 at 06:13pm User: Lisa from Henderson, NV User Rating: This was the easiest and most delicious salad I have ever made. My mom makes a salad like this, but is a sour cream base. This is much healthier and without all the added calories. I made it for my coworkers and they loved it. Delicious and light! 05/23/2007 at 09:45pm User: Anonymous User Rating: My bf who does not like cucumbers even liked this dish! It was a bit salty, but I think I may have left it in the salt about 10 minutes too long. Next time I will make sure to wash the cucumbers better and after exactly 20 minutes. Laughably simple! 05/13/2007 at 10:00pm User: SEAN from WASHINGTON, DC User Rating: And oh so delicious! I only had one English cucumber so I supplemented with a carrot and some radishes. Very important to not leave the mixture in the salt for too long otherwise the final product may be a bit too salty. Thanks, Ellie; love your recipes! Yummy 05/08/2007 at 08:49am User: Anonymous User Rating: This salad was great tasting, clean tasting and so healthy. quick easy and yummy 04/28/2008 at 07:03pm User: Anonymous User Rating: i agree with everyone else. skip the salting and dice the onion. so good and so light and healthy. a winner! The dill was an especially nice touch. My husband loved it! cucumberlious 04/16/2007 at 04:05am User: dina from auburn, MI User Rating: very delicous. a must try. very easy to make. Good 04/13/2008 at 04:12pm User: Michi from Sanford, NC User Rating: Try it with rice wine vinegar and no sugar or dill. An Alright Salad 04/13/2007 at 02:43pm User: Katie from Bayonne, NJ User Rating: Was not too impressed. THIS IS AWESOME!!!!!!!!!!!!! 04/12/2008 at 01:42pm User: Anonymous User Rating: Tangy dressing and crunchy veggies. Perfect for any meal!!!! Delicious 04/04/2008 at 02:22am User: Mindy from Hallandale, FL User Rating: This is the best cucumber salad that I have ever eaten. The recipe is absolutely perfect. Make sure to wash out the salt prior to adding the final ingredients. delish 04/03/2007 at 12:31am User: Hannah from Seattle, WA User Rating: It was a perfectly light side to my dinner. I would recommend making it with sweet onion with the red onion. I havent yet tried it with sweet onion but i think it would go nicely. It was very easy and it took like 2 seconds to make! Delicious, cool and refreshing 03/27/2008 at 12:36am User: Pam from Minnetonka, MN User Rating: Great summer salad that is light, tasty and refreshing. Perfect for a summer BBQ side salad or to bring to work. Yummy 03/22/2008 at 08:27pm User: Anonymous User Rating: I love this! It's not as tart as a pickle, but it gives the cucumbers a slight flavor...this is my new favorite salad! Yikes 03/05/2008 at 09:07pm User: Kimberly from Fleetwood, PA User Rating: This was wayyy too much dill for me - I couldn't even eat it. Next time I will only use half the dill (or less!) and it will probably be great. I just can't tell because all I can taste is dill! Salty, but fixable 02/26/2008 at 05:35pm User: John from Oviedo, FL User Rating: Yep, too salty! So I added a can of drained, rinsed kidney beans and a couple seeded, diced amorosa tomatoes to dilute the saltiness and it was better. Refreshing! 02/20/2007 at 01:00pm User: sandy from desmoines, WA User Rating: This was paired perfectly with the sloppy joes! This makes for a great summer side dish as well. Did I do something wrong? 02/08/2008 at 03:46am User: Barbara from Mechanicsfille, VA User Rating: This had a really strange taste, and I thought I followed the recipe. The cucumbers tasted flat after salting and rinsing, and I was hoping to taste the sugar more--sounded like a good contrast with the vinegar and dill. I won't be trying this one again. Great!!! 01/30/2007 at 09:01pm User: Anonymous User Rating: Great!!! Good except for the salt - don't need to do that 01/26/2008 at 09:57am User: Amy from Manchester, MD User Rating: I made this with the salt the first time and TIMED the 20 minutes of 'marinating' and it was way, way, way too salty. I threw it out and started again without soaking in the salt and it was perfect. Use the dressing, but omit the 'soaking in salt' part and you are all set! Nice 01/21/2007 at 09:22pm User: JACKIE from Cottage Grove, WI User Rating: The cucumber salad was a refreshing hit. My husband and our 2 young kids really enjoyed it. Thanks! Easy and tasty 01/16/2007 at 07:39pm User: Tania from Cumming, GA User Rating: The salad was light and refreshing great with salmon and redskin mashed potatoes good, but... 01/16/2007 at 05:04pm User: Ann from Moraga, CA User Rating: I agree with the previous review that "something is missing". I found the vinegar/sugar dressing too strong for my liking so I added 1 tsp of olive oil and that added some dimension to the flavor. quick and easy 01/14/2007 at 10:45pm User: Anonymous User Rating: Very good and very easy. It seems like something is missing with this recipe though. It could use a bit more flavor. Love the lightness.. 01/06/2008 at 10:58pm User: Kristi from Red Wing, MN User Rating: I made this to go with sweet/hot chicken wings, and it complemented the chicken nicely. I had to add extra sugar and white wine vinegar as otherwise it was too salty. May omit that next time. All in all, very good! It was good 01/05/2008 at 02:14pm User: Janey from Provo, UT User Rating: It started out really salty. I might have done something wrong, but I added more sugar and some distilled vinegar and it turned out pretty good. It went really well with the sloppy joes from the same episode. |
