A change from vinegar

I make a version of this salad at least twice a week. I add goat cheese, grilled chicken, kidney beans, olives - whatever I have on hand and have it as a dinner. The lemon juice is such a refreshing change from vinegar - I love it!!!

Not only was the dish prettier on TV but it just lacked flavor. It was just too blan, if I am going to have such a lite salad I need it to be full flavored and lite.

My Favorite New Salad

User: Deanna from Commerce Township, MI    User Rating:
It's great! I put all the ingredients together (minus the parm, olives, and lemon with olive oil) in the fridge. It's stays nicely in the fridge for a couple of days and when I am ready I just throw the olives, parm, fresh lemon, olive oil and salt & pepper in at the last minute and it's just what I needed in a pinch. (if you do refrigerate the salad, make sure that the green beans are completely dried off before you put them in the salad... Use a strainer and a paper towel).

Wonderful!!

Everyone in my extended family loved this salad. I am glad I put the red onion on the side because no one particularly wanted it. It happened to be quite a strong onion, and would have overpowered the rest of the flavors

This salad kind of took me by surprise as I would not put these things in my salad. These reviews say it all...it was so light, crisp and refreshing. What a great and healthy salad this is. The flavors work so well together with the light lemon and EVOO dressing. I did add some nice plum tomatoes to ours and they were a nice addition. Can't wait to make it for others. Thanks once again Giada!

This is the first Giada recipe that I've made, and all I can say is, "Oh. My. Goodness." This salad is quick, easy, healthful, and delicious. I made it for my sisters and it was a huge hit. The dressing of lemon juice and olive oil is surprisingly flavorful. I followed the recipe exactly and it came out perfectly. Thanks for a keeper!

This is one of the best salads I have ever had. It has easily become mine and my husband's favorite. We used chick peas for the beans since we had them on hand. It was so good! Highly recommended for a quick and easy meal or a nice side dish. We'll be making this at least once a week!

I've made this salad 3 times since watching the episode a couple of weeks ago! It's delicious, light, and refreshing. Love the lemon juice and olive oil! I added garbonzo beans one time instead of the cannelini beans...it was good but the cannelini worked better. To answer a previous queston...no, Giada didn't ream an orange over the salad.

I made the salad last night and my husband and I both loved it. My only question is, the recipe calls for black olives. I didn't see the show where Giada made the recipe, so I'm not sure if I should have used Kalamata olives (or something similar) or regular old black olive. Help!

I have renamed this my Spa Salad. This is really good and versatile. I have omitted the cannelini beans and added roasted potatoes with the green beans, I also added hard boiled egg whites and tuna. It is very good with both beans too.

User: Kim from Edmond, OK    User Rating:
This salad was so delicious! My husband enjoyed it too. Each ingredient added a component of taste and texture. The red onions added color, crunch and a wonderful sweetness. I also added broccoli that was lightly steamed (just long enough to enhance the color)and enjoyed the addition very much. The lemon and olive oil dressing is light and refreshing. The beans and shaved parmesan added a creamy texture and heartiness that made it a meal.

So yummy!

This salad was so crisp and refreshing and light and delicious! everything a salad should be! and the mixture of the beans and the green beans and the onions and the olives really filled you up more then just your regular ole salad! You have to try this!

Love the Zing!
01/15/2008 at 07:25am
User: KELLY from Chesterfield, MI    User Rating:
This salad was really easy and great tasting! I love the zing in the simple lemon and oliv oil dressing. The only complaint I have is (and I don't know if my head of romaine was smaller than the one she used) that it seemed there was a lot of excess dressing. So next time I will maybe make the dressing seperate and use as needed, but overall i loved it!

User: Susan from Birmingham, AL    User Rating:
My husband and I loved this salad! We're not big fans of lemon in our salad dressings, so I used a bottled Olive Oil Vinagerette that I picked up at the grocery store. It was perfect with it. I also cooked my green beans about four minutes, instead of the two minutes it calls for. That's just a personal preference. This recipe is a definite keeper, like most of Giada's recipes!

Is the recipe missing an orange?

Delish!!

User: Y from chicago, IL    User Rating:
So easy and healthy. I vary the beans sometimes, garbanzos, black beans, tonight it will be large white limas that I made from dried. Also the lettuce, sometimes preferring escarole for the slightly bitter flavor. If fresh green beans aren't available, or just don't look good, I'll use frozen. They retain the texture much better than canned and don't have the added sodium. For me the lemon is necessary. It compliments the parmesan in a most delightful way.

Have a question

This recipe sounds delish; however, I live in a rural area where fresh green beans are not available this time of year (winter). For those of you who have made the salad, would canned beans (well rinsed) be a suitable substitute?

Good side dish for a grilled leg of lamb. Go easy on the lemon so as not to overpower the dish. Nice fresh flavor and contrast of textures.

User: Taheera from Charlotte, NC    User Rating:
I was skeptical as to what the salad would taste like with just the lemon juice and olive oil as the dressing, however it was the perfect kick in the salad. I did add tomatoes since my spouse didn't want to try the beans and olives, but this recipe was simply delicious, I fell in love. Oh and I added broiled salmon. Finger licking good. Just what I needed to continue my plan to eating healthy and preparing my meals at home

I tuned in to the show only after Giada had the greens in the bowl so I thought the base was just torn greens.Ten minutes later I made it for my family along with R.Ray's Spaghetti and meatball stoup. The salad was easy and delicious -my version lacked only the string beans but was perfect. My family loved it and I will make it often.
