However, if you make the recipe as written, you need to know that a 12 X 18 pan is NOT quite large enough. There was too much crust batter. I took out 1 1/2 cups of filling, and still struggled with the filling overflowing. I WILL make this recipe again, but split it into 2 pans. Also, I used a heavy duty stock pot, and I'm glad I did because the hot bubbly filling doubled in size. Good luck! I am an accomplished cook, and was afraid of fitting nut mixture into crust. It did fit but ran over onto bottom of over but not too much. Do not cook the shortbread longer! Shortbread is supposed to be melt in your mouth soft, not crispy! They are super rich - I just made them for the 3 of us for some crazy reason and have been busily boxing up bars for friends and neighbors so they won't do to waste. I can see how the chocolate would make them so over the top sinful - but delicious! The estimate of 20 bars for this recipe is really like 40 - you will go into diabetic coma if you eat a giant sized bar! Ina rules, though... They we very good - nice soft crust. I'd definitely make again but without the zest (zest is what gave it a 4 vs. a 5). I simply didn't care for that mix of flavors. I made a couple changes: Cut recipe in half and used a 9x13 metal cake pan with straight sides. I lined it with foil and buttered the foil. For a full recipe, just use two. The combination of the high sides and foil meant ZERO mess. No spills in the oven and didn't even have to clean the pan. The whole thing just lifted right out once cooled. I used a mix of nuts (pecans, almonds, pistachios, pumpkin seeds, and almonds) and it was great. Using larger pieces and a variety gives nice texture and flavor. Some of my nuts were salted which adds a great flavor. This is a great way to use up odds and ends of nuts. I baked the crust for 23 minutes. Some people complain about the thickness of the crust. I thought it was perfect - I think it is simply a matter of preference. I used the chocolate but probably won't next time. They are great without it. After reading the reviews I made adjustments that resulted in a great dessert bar. I used 1 cup less of the pecans (no pan overflow) and instead of dipping in chocolate I drizzled it across the top. I cut them much smaller (3" bars) and they go a long way. I also spoon the pecan mixture into the shell very gently and line the bottom rack of my oven with foil. I only used about 3/4 of the topping and they turned out perfect! Not a drop bubbled over. The only thing I'd say is that they are so sweet they make my teeth ache. I cut them in very small squares. A little goes a very long way! This recipe is definitely costly and time consuming but for the right occasion it is definitely worth it! I think I'd use less honey next time though. It's very overpowering in the bars. I loved the hint of orange and lemon zest. Just the perfect flavor. I didn't dip them in chocolate but I think next time I will drizzle it over the top. After reading the reviews about how messy theirs were, I was worried about how mine would turn out. Much to my surprise they were wonderful! Maybe they should try a recipe twice and double check what they're doing. I've made these a few times now and they are the best pecan bars I have ever had. I cut the recipe in half and made them in a 9"x13" baking pan. Perfect. Use a roller designed for use inside a pan to get the crust up the sides. After par-baking it, push the dough back up the sides. Everyone of my foodie friends who've tried these thought they tasted fantastic! They're a total winner- Filling- perfect- not too sweet at all. Crust- perfect. Too much butter?! Is that possible?! As for the chocolate to dip them in? Make a ganache- put 2 cups chocolate chips in a medium mixing bowl. Bring to a simmer 1 cup cream, 2 tbsp. unsalted butter and 2 tbsp. sugar. Right before it boils, pour it over the chocolate- let sit for a minute or two, then stir with a whisk. You can dip the cooled pecan bars right away, then refrigerate until chocolate sets. I HIGHLY recoomened these bars! I halved the recipe and used a 9x13 pan - had no over-boil/spill in the oven whatsoever. I skipped the orange zest and used only some lemon zest (perfect) - it offered just barely a hint of lemon. I substituted 1/2 the honey for dark karo instead and then also used a bit more brown sugar as well (due to comments of too much honey taste). To finish, I drizzled ganache over top, after bars were cooled a bit. My husband is not a nut fan at all - and he LOVES these, he could not believe how fantastic they were. The crust, btw, does take much more labor than indicated - you really want to make as much of an "edge" as you can, and that takes time - esp. the 1st time you make them; def. need to flour your fingers/tools to make edge as dough is very sticky. Here's why: They are very expensive (I think the nuts alone were about $18). It does make a big batch but I couldn't figure out what to do with them all. My husband liked them but my kids didn't. They are very rich so you can barely eat more than 1. It was also a pretty messy ordeal. They wern't that bad, just not worth all the money and effort in my opinion. Don't create an oven mess. Secondly, add 5 minutes to the time the crust is in the oven the first time, otherwise it won't bake all the way through. It comes out too doughy if you don't do this. Thirdly, substitute Karo dark corn syrup for the honey. Honey is too sweet and makes the bars way too sticky. And lastly, when baking the pastry with the pecans in it, check after 25 minutes, but allow to bake for a few minutes more until the pecans are bubbly to ensure it has set properly. A few tips:(Just like everyone says) Sugar boils over and burns on floor of oven - line with foil to ease clean up. When she says 'make an edge' on the crust before baking, make a WALL. The crust puffs slightly, and in order to get the proper edge, you really have to mean it before baking. Last but not least, I used mixed nuts - basically because I don't like pecans. I brought them to work and get requests for them all the time. BUT, they are pretty difficult and messy to make. Be sure that you have a pan that is big enough...the nut/caramel mixture will spill over the edges and make a huge mess. (she is a pastry chef) we didn't have any problem with them and they are excellent! Like baklava and butter cookies mixed. We used two sticks of butter in dough. One tip, my daughter said NOT to use butter at complete room temperature. It should still be cool to the touch. We used two sticks in the topping as well. All of the topping was used and we had no dripping. I rolled a rolling pin over the top of the dough to make it more even in the pan. Don't overwork the dough. If the butter is too warm, it will just melt and not hold up the dough in the oven. Once the topping was on, I took it out after 15 min and spooned some of the sauce where spots were dryer, then just fixed the nuts and rebaked for another 10 min. Chocolate was overkill and not needed. These were truly excellent. If you have a problem with this recipe, you must be doing something wrong. We had smoke dammage and had to get rid of ALL of our food from the kitchen to make sure any of it wasn't toxic. They are over the top and should be. I first made them for a Christmas party last year and had to defend the remaining bars from predators. Do put foil under the pan while baking. Mine did not spill over but why take the chance. If you make the edge in the dough and don't crowd the edge with the filling I don't think yours will either. You might strain your back lifting the baking sheet so be careful, that puppy is going to weigh a ton. I cut the bars pretty small and then made a ganache(look up a recipe) and drizzled it all over the top of the bars and I mean all over. These are worth the expense, time and effort.
