I really loved this stew, but there were some drawbacks. I used a whole bottle of wine, and marinaded for a whole day, next time I would do just a few hours. The wine flavor was not overwhelming, but just more prevalent than I would like. I give this recipe 4 stars only for prep reasons. It took FOREVER! There is a lot of chopping, and switching pots and pans, and I used MUCH more oil than I had anticipated. Overall great tasting stew, and this makes a huge batch!

I loved the beef after being marinated in the wine overnight but the broth was rather tasteless for all the work that went into it. I used the fresh rosemary and everything but the worcestershire sauce. I had high hopes for this but it was just okay. I have made homemade stew without a recipe that was better.

I have a beef stew recipe that EVERYONE raves about and I think I will stick to my own recipe. I was diappointed in that the wine taste was so overpowering that none of the other flavors had a chance. I think I will stick to my tried and true recipe. Thank you.

I love this recipe - it's simply wonderful. However, what I really love is the technique -- brown meat, move to another pot,cook veggies, move to another pot and THEN create your sauce in the empty pan. Why didn't anyone think of this before! I've already used the technique for braised lamb shanks. The amount of excess oil is minimal, you get all the brown bits. Thanks Ina!

This recipe took me an hour from start to oven time. After reading the other reviews, I only used 1/2 bottle Fox Hollow Cabernet Savuvignon. I mixed the flour mixture in a gallon zip bag. After I took my meat out of the frig, I drained it and then put it all into the zip bag. I shook it up well to completely coat the meat and then put it into a big dry strainer. I shook it over the sink to get the excess flour off of it and it worked great. Also, I used just over 3 pounds of meat - because that's what was in the package. I also used 2 pounds of fingerling potatoes. I like potatoes. I also used a pound of mushrooms. I bought a bag of pre-cut thick steak mushrooms from the grocery store. They're ready to go in the bag so all I had to do was dump them in. Since I used a non-stick pan, I didn't have the drippings to sear. I did bring the wine & broth to a boil before dumping over the stew mixture. I used 1 & 1/2 cups of the wine and then the rest beef stock. I just couldn't see using chicken with beef? Oh, I used a 3oz bag of sun dried tomatoes. I cut them into pieces so it was probably more like a cup. Everything turned out really well. My family really liked it and I will definitely make it again. One last thing, on the rosemary, some of mine came off into the stew but it was so tender with the rest of it that you didn't notice it when you ate it.

Althought I could see where this would be very good if it only had a lot less salt and pepper. DAILY intake of salt is 1 teaspoon. This was so salty I could not finish eating it. check your recipe. This much salt and pepper has got to be a mistake.

We first ate this the evening I made it. We thought it was pretty good, might search for a better recipe. However, the second time around, it was great. So, fix it and refrigerate it and let the flavors develop for one or two days. Trust me, it just gets better.

The rosemary & wine really added delicious & unique flavors for a beef stew! I am not a huge beef stew fan, but I will definitely make this again. I halved the recipe and only marinaded the beef for a few hours, rather than over night.

I saw Ida make this and it looked absolutey scrumptious! After reading everyone's reviews, I decided to try the recipe with a few adaptations. Of course, I put extra garlic in it (both in the marinade and later.) I substituted the chicken stock for beef (I used one can of Swanson's). The most important change is I only used 1/2 bottle of Cabernet Sauvignon...and I didn't buy the expensive stuff: the $5 Barefoot brand!! I didn't put the Worcestershire sauce in; I don't care for it too much. The next time I make it, I'm going to use MORE mushrooms (one container of fresh sliced wasn't enough!) and more carrots (I used 1 lbs of the baby cut). It was a tad greasy in the end, but the flavor was STUPENDOUS!! Everyone loved it, including my Chef-in-training brother!!

This is easily one of the worst recipes I've ever tried. The flavor was too strong and it just tasted odd. We fished out all the meat, fed it to the dogs, and threw the rest out. What a waste of time and money.

Best stew I have ever eaten. I agree with most reviewers that an entire bottle of wine would be overwhelming. I used about 2 cups and made-up the difference with additional broth. I too used beef broth. I added celery because my family likes the flavor and added thyme to the marinade and the dish while cooking along with the rosemary. I used crushed, dried herbs put them in a tea ball while cooking so they could be easily removed. I don't like hard pieces of herbs in the finished dish. The end result was a very multi-level flavor. Could taste all of the ingredients. Delicious. .

This was my first time making beef stew and it turned out perfectly. Thank you for this delicious recipe, Ina! I used 1/2 bottle of wine in the marinade, as another reviewer suggested. We don't have a dutch oven, so I cooked it for 6 hours in the crockpot, some of the time on high, but mainly on the low setting.

I looked forward to this, but you have to remember that most beef chuck sold today has all the fat removed from it, so it is necessary to keep adding olive oil to the pot to brown the beef. Like some other reviewers, I think the marination time is too long, as you taste only the wine and not the beef. It was tough, but chuck is a tough but of beef. As with many of Ina's recipes, this was was also salty, so I think it is important to remember starting out that you'll likely have to reduce the salt. I think it is not worth the trouble. Would not make again.

Wow, just made this Stew. Killer flavor! The only reason to hold back on the Fifth star was how confusing the directions were....alot of pot switching and rereading had to happen. Also, substituted diced turnips and butternut squash for carrots and potatoes...added a little hot sauce...and OH MY GOODNESS! Well worth the sink-load of pots.

This stew was fabulous. I don't often rate recipes, but I had to write to say that the beef just melted in our mouths. My husband said it was the best he has ever had and he's from the mid-west!! Good job Ina. The only change I made was to add twice as much garlic and I cut the vegetables into bite sized pieces, along with the beef. This will be a regular winter dish for us.

I expected this to be a great dish and it lived up to expectations! I read some reviews and decided to cut the wine with some beef broth. I think the full bottle of wine would have seasoned the meat even better. (Why did I doubt Ina?) I did find the dish to have a little "heat" to it and can't figure out what that was. The only change I made other than half the wine was to use a small can of tomato paste in the sauce since I like the hint of tomato in beef stew. Will make this again and again! The only change I will make next time is to cut way back on the rosemary, since it is not a favorite of mine. A+ !

I too cut down on the wine and used dried thyme instead...that's all I had. I think cooking down the carrots and potatoes made a big difference and I added bell pepper...southern girl. Looking forward to trying more of Ina's recipes!

After trying out this recipe for the first time and feasting on it, I felt compelled to post my rating and comment here. After all, the reviews from other people here helped me tremendously. I used almost 3 pounds of very lean London broil beef (to cut down on fat and cholesterol). Used about 80% of a bottle of Bella Sera 2005 Pinot Noir to marinate the beef (that was all the wine I need to fully cover the beef). I marinated the beef overnight (according to the recipe) for about 16 hours. To cook, I used 2 cups of the marinate (instead of 2 1/2 cups) and added 4 cups of Swanson's low-sodium beef broth (instead of 2 cups of chicken broth/stock). One other minor change that I made was using 1 pound (instead of 1/2 pound) of mushrooms because I love mushrooms. In preparing and sauteeing the ingredients, I pretty much followed the recipe exactly. However, in baking the stew, I baked at 250 degrees (instead of 300 degrees) for about 4 hours. Everything came out perfectly. The beef was nice and tender and the vegetables were cooked just right (not mushy at all - that was a concern that I had). Also, after reading some of the comments posted here, I was a little concerned that the wine would overpower the beef and everything else, but I did not find that to be the case at all, even though I marinated the beef for 16 hours. Over all, the stew was absolutely delicious and was definitely worth the time and effort. I feasted on it with a nice bottle of Italian red wine. Amazing!!!

Very easy to follow instructions and what a taste! The house smells delcious. Good to make on a cold night, especially if you're having company. The smell when they walk in the door will knock them out. I followed directions exactly and had to make no changes. A rare thing.

The flavor was good on this but the method definitely needs tweaking. I did this at a lower temp for a longer time, and didnt add the potatoes and mushrooms until the last hour of cooking. I took everyones advice and did half broth and half wine for the marinade, and forgot to do it overnight so it only sat for a couple hours, but was good. Thanks.

I saw Ina make this stew on the food network and it looked delicious. I've been thinking about making it for over a year now and finally tried it. SOOOOOOO GOOD! After reading some of the ratings I was reluctant to try it because most people said that the wine was too overpowering. I used a bottle of Merlot and used beef broth instead of chicken broth. I used the beef because other people said it played down the wine. Well, it did, and it was wonderful. I fed it to my whole family: ages 8-80. We all loved it. I would definately make this again....actually maybe tonight! DON"T WAIT, TRY THIS DELICIOUS RECIPE!

I make stew almost once a week in the Winter and don't follow a recipe, I just make it how my mother made it. I LOVED this version of stew and will always make it this way from now on. I cut down on the wine (about 1 1/4 cups)and used a good Pinot Noir. Also, I only used a small sprig of rosemary. I love the sun-dried tomatoes in it! Can't wait to make it again!

heeding the warnings of other reviewers, i used half wine and half stock, and results were fantastic. i must say that a full bottle of wine would have made the dish even more delicious, and thus i would recommend using the entire bottle, a fairly decent one of course.

Best beef stew I've ever made! It's easy to prepare and absolutely delicious. I like the idea of adding frozen peas at the end, not only it adds color to the stew but also making it tastier. Our whole family had a great dinner with this beef stew, especially when it's cold and rainy outside. I enjoy watching Ina cooking on TV!!

My house smells wonderful! But, the stew has a tad of a sour taste. I've added half a small can of tomato sauce and about a tablespoon of raw sugar. It defintely needs to be in the oven a few hours longer! Will cut down the pepper next time. But...all in all, delicious. I love Ina. She is the best of the best!

Actually I hate beef stew, so when my husband started working on this recipe I was not thrilled! Very pleasantly surprised- excellent tasting, and even our 2 and 4 year olds ate a ton of it! I think this recipe is either love or hate, no in between- I loved the unique flavor of the wine and found it fairly easy to make, just have to plan ahead. I agree with another viewer, this will be great on a very cold jan. or Feb night!

This was SO GOOD! I did take into account the previous reviews regarding the amount of wine to use. I used about 1/3 of the bottle to marinate the beef (had the rest of it with the meal - Robert Mondavi Cabernet Sauvignon 2005) and also used beef broth instead of chicken broth. Other than that, no variations. Chopped all the ingredients ahead of time. Made it very easy. This is the best beef stew I've ever had! Extremely filling and delicious!

I agree with all of the other reviewers who say that the wine taste was overpowering. Also, I didn't remove the rosemary sprigs in time and the little pieces of rosemary broke off into the stew, which made eating it a pain in the neck because you had to pick out the rosemary pieces. I threw all but 2 bowls of this stew away.

The recipe worked wonderfully in my crockpot. It was very easy and absolutely wonderful. Marinating the beef in the wine is the key to this dish, so use a good wine!

My family and I loved the flavor that the wine gave to the stew. I also liked the addition of the sun-dried tomatoes. Its definitely a keeper. Just make sure you have a pan large enough to hold it all.

This is a fabulous stew recipe. I do differ however on the prep time of 15 mins. Ummm...it took more like 70 mins, whewee. That includes chopping veggies, browning meat, +++. Really delicious. I would appreciate however if recipes would include calories per serving plus nutritional info e.g. carbs, proteins, etc. Thanks! By the way did try the Beef Bourgignon recipe a few weeks ago for Easter. It was good too. But gotta say Parkers is well you know already yum!

I usually love Ina's recipes, but I will not even save this one. The recipe calls for 1 tbls. of salt in the dredging flour, plus 1 tbls. salt and 2 tbls. of Worchestire sauce in the stew. I should have followed my instinct and reduced the above amounts because the resulting stew is way, way too salty. I will stick with my tried and true Julia Child beef stew recipe.

This stew was very easy to prepare and to cook. It got rave reviews from my family and friends that night that we had dinner. I only had one helping in reserve after dinner was completed. I served the stew with homemade biscuits and a bottle of Cabarnet. It was all very delicious, and really tops my delicious charts. Great stew but only if you buy EXCELLANT meat and use equally good wine. REALLY! It's all about the ingredients so remember that you can't be cheap and expect this recipe to end up well. Fun for good old time memories and even for a dinner party! I served Ina's Orange scones for the bread to go along with this but I made them plain and didn't use the orange zest. She made me look like a chef with this recipe!

I made this several weekends ago and found that it was a very pleasant tasting stew. It was a little rich, so next time I may not use as much wine, or perhaps a different one. Nevertheless, it was a good stew and I had plenty left over to freeze for additional meals when crisis management takes over and I'm tempted to eat out.

The recipe sounded quite promising. The finished product was too peppery in taste and overwhelmed the other flavors. Since it doesn't have a lot of pepper in it I'm not sure where the flavor came from. We threw it out.

Unbelievable! This recipe is the one I have been searching for. I couldn't get enough. If I had the money, I would buy a bigger Dutch Oven. The wife loved it too. The wine wasn't overpowering like other recipes. Very hearty, but not dry, just enough juices and wow, the flavor. It even looked rustic like a cowboy would eat out on the range, but w/more flavor. I could rave on, but my bowl is empty..

I'm not a big fan of red wine but I thought I'd try something different. I used Cabernet Sauvignon and it was definately overpowering. It was good but the stew didnt have a beefy taste at all which is what I love about beef stew. I wouldve preferred it with a beef stock instead of chicken and alot less wine. The beef was really tender though as well as the vegetables. Not sure if I'll ever make this again but if I do, I will definately make the suggested alterations.

I made two batches of this recipe for a buffet dinner. This is without a doubt the best beef stew I have ever made. My guests loved it. As my supermarket was out of fresh rosemary, I substituted 1 tsp. of dried rosemary leaves for fresh.

Cut the receipe in half. Based on other comments mixed equal parts of wine and beef stock for marinade. The stew has a lot of flavor and makes a great winter meal.

I read all of the reviews, both good and bad, before making this recipe. With a few adaptations, my husband and I both thouroughly enjoyed this updated version of a stew. I chose not to marinate the meat in the wine, as many people said the wine flavor was too over powering. I used london broil rather than chuck and it came out very tender. I used a nice Pinot Noir and the flavor was perfect ( 1 cup of wine and 1 14oz. can of beef broth rather than chicken). I did cut down on the rosemary; I just find it to be a very stong herb for my taste. Overall, delicious served over some nice egg noodles and some crusty bread!! Gotta love Ina!

This is a wonderful recipe!I do not even like beef stew, but I watched the episode when she made this and it looked wonderful on T.V and it is,I do recommend tasting the red wine you choose to use I used Cabernet Sauvignon as it is my favorite red wine. However my mother made the same recipe and her's turned out sour.I will make this again.

After reading all the reviews online stating how overbearing the wine in this recipe is, we altered the wine. We used a pinot noir and marinated the meat for only two hours rather than overnight. We also only used half a bottle rather than the whole bottle. We also inadvertantly left out the wors. sauce. It turned out amazingly well. Incredibly tasty. I have no doubt, however, that the wide range of reviews of this recipe dirctly correlates to the wide range of wines used.

My boyfriend and I kept saying OMG how good this was as we ate it. The taste was spectacular and the meat was so tender. It was not hard to make at all. Bit of time but the best things usually take time. I think with many things though your choice of wine will make all the difference in this recipe, we used a good local Baco Noir, rich full bodied red that blended well without overpowering the meal.

I was so excited about trying this recipe that there was no time to marinate overnight. I used a better cut of beef and marinated for a few hours. I used beef stock as that was what was on hand. Since we were on vacation, we were not going to be home in enough time to cook in the oven. I marinate the beef overnight and prepared everything in the morning. Then I put it in the crockpot and left. We came back about 6 hours later. The flavor of the stew was wonderful, the colors were rich. For some reason the meat was not as tender as I had hoped. It was a little chewy so I think it could have used more time in the crockpot. Other than that, I loved it.

This recipe was just okay. I decided to make it after seeing Ina make it, but there just wasn't enough flavor. The overwhelming taste was of the red wine, which I love, but that's pretty much all you taste. My husband said he really like it, but agreed that it needed more flavor. I'll keep looking for a better beef stew recipe.

The wine and sundried tomatos make this beef stew very rich. I used oil packed sundried tomatoes and doubled the garlic. The wine I used was a very fruity, $15 California Syrah. I also added a little of the sundried tomato oil to the pot. It was perfect! Leftovers quickly disappeared the next day. Be sure to have some crusty bread on hand to wipe your bowl clean.

One of the best recipes I've ever used. Tip...make the stew the day before you plan to serve, refrigerate over night, skim off some fat before re-heating, serve over egg noodles. I did mince four cloves of garlic and I used a bit more rosemary (we are big fans). This would be perfect on a cold day in February.

I made this recipe last week and we loved it. I used a Cabernet Sauvignon from Australia, an earthy, full body wine. I froze the leftovers, and thawed them in the oven, in a covered casserole, at 325 for @ 1 1/2 hrs. Perfect! I will use this for company and those cold winter nights. After reading the reviews I agree that the type of wine used can make a difference in the end result.

Use the red wine of your choice and it will work out well. I'm not into red wines so my wine store suggested a burgandy, it was great! enjoy!!!!!

I have tried many, many different types of stews before, but this one was well worth the effort. It took more time in the prepping process with all the chopping of the veggies, and I did alter the recipe a slightly, like adding some pepper flakes with the veggies while cooking for some heat, using only 2 c. of the wine instead of the 2 1/2 and I increased the chicken stock from 2 cups to 2 1/2 cups, I just basically swapped the 1/2 c. wine for the 1/2 c. of stock. I also changed the cooking from 300 to 275 degrees and let the stew cook for 5 hours instead of the 2-3 hrs. I also added the rosemary to the pot during the last 1 1/2 hrs. of cooking so the taste was more "fresh" and "bolder". But, it was a very nice and tasty stew that I will be making more this winter!!

I am in college and I don't have a dutch oven, so I just simmered the whole thing on the stove for two hours instead. At first it was pretty liquid, but after sitting a bit it thickened right up. Pretty great flavor! I put some new bay leaves in the pot to simmer and add extra flavor!! Made my apartment smell homey!

A lot of prep time, but worth it. I used a Cabernet, but might try a Bordeaux next time. I also would cut the beef up into smaller pieces, leave the mushrooms whole, and reduce the entire recipe by half, as there is only two of us. It took about 3 hours in the oven. My husband said it was the best beef stew he's ever had. Another winner from Ina!

I've made this twice and both times it was great. I used a Cabernet the fist time then a burgundy the next. We prefered the burgundy. We even served it for company. It is labor intensive. I dont understand the bad reviews. They must have skipped a step/done something wrong or used a bad wine.

Can I rate this a 2.5? I have issues with this recipe that are not the same as others I have read. I followed the instructions for preparation to the letter with the exception of leaving out the frozen peas and mushrooms. I did not marinate the meat overnight. The meat marinated for about an hour and the wine flavor was perfect. I didn't remember that Ina had marinated it overnight. Also, I did not have chicken stock on hand so I used beef stock. The problem that I had was by the time the meat was tender enough to eat the carrots and potatoes were mush! The next time I attempt this recipe I will probably add the potatoes, carrots and onions after about an hour. There was a lot of prep work, which I don't mind, but I should not have tried this on a school night. By the time it was ready the kids were starving!

I made this last night and it was great. I didn?t have a bottle of wine so I used cooking wine and it was good. Obviously if you use a nice red it would have been better. I also added dried thyme just before I put it in the oven, left out the sun-dried tomatoes, and doubled the amount of chopped garlic. I was amazed how gravy like the liquid was. My previous beef stew is more soupy. This is a great recipe and very easy!

LABOR INTENSIVE IS RIGHT! I REDUCED THE HEAT TO 250 DEGREES FOR ALMOST 3 HOURS...PERFECT! NEXT TIME, I WILL USE A SMALLER SIZE BEEF CUBE...THESE WERE A BIT TOO LARGE. ONE INCH WOULD BE BETTER. WILL MAKE IT AGAIN!!

I had bought everything to make this recipe BEFORE I had read the reviews so adjusted the wine, reduced it by 1 cup and increased the stock amount by 1 cup and it was excellent. I try a new beef stew recipe everytime I see one, have tried about every cooking show's version and this has to be the best. My husband wanted to know what the "grass" was in the stew so maybe next time I will take the leaves off the rosemary branch and chop them a little finer, but it did give it a gourmet flavor. I used a Merlot wine (and also reduced it in the pan when I added)because that is what I had on hand.

I made this for a dinner party, and everyone raved about it. I used beef broth, instead of chicken, as I thought this would be a better counterpart to the wine. It was so simple and elegant, going right from the oven to the table. It was served with rolls and sweet butter, as nothing else was needed. Talk about easy entertaining; I spent no time in the kitchen, and all the time with my guests. I'll definitely be making this again (probably for Christmas Eve dinner).

If you're feeding a crowd or have a big family, the amount is probably ok, but there's just 2 of us at my house so this was A LOT. Might try a different wine next time OR skip the marinating step altogether as the beef really picked up the wine flavor very strongly. Veggies were quite good...it was a pleasant surprise that they still had some crunch & bite to them even after the long cook time. It was even better as leftovers. First time I've tried one of Ina's recipes, and I will be using this one again...only next time it'll be cut in half.

This one will please even the picky eaters in your family. I tested it out on my boyfriend and he absolutely loved it. Then I made it for my family of eight and they raved over it. I suggest trying it...this meal is worth the time you put into it. Just a tip: because I'm not yet 21, I couldn't use red wine for the marinade.
