A great recipe with lots of flavor

This is a great recipe, extra vinegary and totally spicy, although not particularly traditional. I used a dutch oven instead of a roasting pan, because I started with a smaller loin roast (grocery store didn't have a butt roast, so you might want to order ahead if you need the bigger size). I have two suggestions: leave out the peanut butter if you want a great stand-alone barbecue sauce (the peanut butter adds a strange flavor to the sauce before you put it with the roast). I also changed the vinaigrette by putting in two tablespoons of pepper that I'd lightly crushed with mortar and pestle, and added only 1/4 cup oil and 1/4 water, then cooked the sauce down by 1/3 and mixed it in with the shredded pork before I served it. It adds a great vinegary zest without adding so much fat (after all, there's fat in the pork already).

Something new and affordable! Leftover chicken works great in this too.Easy!! Looks hard! Anybody can do this! And measuring is not a major in this recipe, just to taste.Slightly salty and sweet,rich and creamy without being to pasty,hot oils finish nicely with the smoky flavor of the smoked poultry.Tangy And nutty flavors pop on different taste buds! This recipe is hardy enough for hungry men while kids will get a kick out of the nutty peanut taste thats sweet! Roll up in flour/corn tortillas, and your the talk of the dinner table!

Great recipe! Good with beef or pork. Easy to customize with your own favorite BBQ ingredients. We added beer to the braising liquid with great results.

I smoke and grill all the time. Living in Florida, that is what we love to do. I made this and was told by all that enjoyed it that it was the best yet. (I am told that my bbq is the best around) All I could say is, "Thank the master, Bobby" This is a must try for anyone!!!

This sounds wonderful, even with the peanut butter. I'll try anything once! I was wondering if this would work in a slow cooker since it cooks for 3-4 hours in liquid. The beer idea sounds great too; should make the meat really tender and flavorful.
