The cotija cheese isn't hard to find (especially here in CA) as others might have suggested. If you can't find it, I think queso fresco might be OK to sub, but I'm not too sure about other cheeses. The garlic butter is delicious and the flavors blend wonderfully. Anytime I make carne asada or chicken tacos, this will be my go to side dish: easy, tasty, and quick. It was a hit at our BBQ. Many people weren't going to eat the corn, until they found out that there was garlic butter. Whan I made the garlic butter, it was really strong, so I had to add lots more butter. Then pick a pretty 3-compartment dish to place lime wedges, grated cheese, and garlic butter. Let your guests create their own. What fun! I substituted Parmesan cheese for the Cotija since a web seach said they were similar. Squeezing the lime onto the corn produced a very uneven flavor. I might try incorporating the lime juice into the butter mixture the next time I make this. Cotija Cheese?? 07/30/2007 at 10:36pm User: Anthony from Gobles, MI User Rating: I think Bobby Flay is an outstanding chef-BUT-for all the others that wanted to try this and happen to be just a simple home cook and US born-- here is how google defines Cotija cheese, or queso a?ejado (Spanish: "aged cheese"), is a semi-hard cow's milk cheese which originates in Mexico. Moist and firm varieties of the cheese can be found, with flavor similar to Italian Parmesan and Greek Feta. I will NOT try this recipe-as no where can I find Cotija cheese. How about sticking to ingredients in recipes that are intended for us un-sophisiticated folks that are just ~90% of your audience? I soak the corn a little longer with some sugar, and it is very moist. You don't need to follow the measurements exactly; I use varying amounts of garlic, hot pepper, and lime. I have never used cotija (can't find it at the store), so I use fresh grated parmesan or asiago. I imagine this could be done in the winter with frozen corn. |
