This is the absolutely best garlic bread I have ever had. The mixture keeps well in the fridge so you can make a lot and have it all week long. If you don't have sun-dried tomatoes on hand, it doesn't really matter. Read the reviews before I made it, and took the advice of the lady who said she only prepares enough for one meal, or else she & hubby would eat it all at one sitting. We sure as heck would've eaten the whole loaf if I'd prepared the whole loaf! The butter mixture freezes well. Next time, I'll divide it into smaller, single use portions to freeze instead of freezing the whole batch in a container. I used 1 container on 2 loaves of bread. I froze the other 2 containers. I put the sundried tomatoes and parmesan on before baking. Delicious! I was right - next time I will put the same amount of butter on more bread. The spread is delicious - it was just too thick for me. My kids loved this bread - especially the baby who screamed when we cut him off! It was an easy recipe, and better still, taught me how to roast garlic! Oops! I have always made just a normal garlic bread but never a roasted one. It was great! As the reveiw above says, I was hesitant about the mayo as well, but I figured what the heck, you only live once right? I am glad I took the chance because this was seriously some of the best garlic bread I have ever made. Roasting the garlic was a snap and actually making the bread was easy. Although I did tweak the recipe a bit and broil the bread for a few minutes after to darken it up a bit more. I also wanted to say that I disagree with the post about being way too much butter spread. It says in the recipe to put half in the fridge, and if you use the long loaf of sour dough, half of the mixture is spot on to cover it nicely. But I did take the tip and froze the rest for another time. :) Gy, once again you rock! I used it on hogies since it's what I had. You can use as much or as little of this wonderful spread as you want. As an experienced cook I think I can make it work but if you just read the recipe you would conclude that you are to use the entire recipe of garlic butter on one loaf of bread. NO WAY can you, or should you, put 3/4 lb of butter and 1/2 cup of mayo on one loaf of bread. You'll maybe use 1/4 of the garlic butter. I guess you could freeze the rest and use it another time.
