My sister and her family love this dish. Make it to impress...I made it for another sister and her guest and one of the children asked me if I was a chef. LOL I do doctor it a bit more = garlic, herbs and blackening seasoningto the sauce. I need to make it sometime when my sister is not around I would love to add fresh peas and mushrooms.

I thought this recipe was easy to prepare.I had trouble finding the blackening spice so subbed with some Essence.Not bad but would like to try it again with another blackening spice.It was a hit with the whole family which is unusual for us.I'm not much of an alfredo person but I loved this.It would be a great recipe to serve to company.

My kids love Olive Garden. One of their favorite entree's is their chicken alfredo. When cooking this meal I didn't season it with the cajun spices so my kids would enjoy it more. It turned out great! It was easy and quick.

I cook a lot and this recipe is wonderful. I have made it about 4 times since I first saw the episode. Last night, I didn't have Sundried tomatoes so I used a can of Diced tomatoes and it still turned out great! I just drained the tomatoes some and let the juices evaporate in the pan longer. I did try a different Cajun spice last night too and Paul P.'s is the best. I don't like fennel much, so Paul's is a good choice.

Although it seems this is a lot of cream, just go with it. The flavor in this dish was unbelieveable. I can't say i would have done anything different. What I love about Guy's recipes is that I really get a taste of what his restaurant would be like and I know I would love it. His recipes truly have BIG TASTE!!

I am so glad that I decided to make this recipe. The flavors were amazing; not to mention how delicious it made my kitchen smell. The sundried tomatoes gave it such a wonderful sweetness in contrast with the heat and creaminess of the dish. It was a "layer" effect sort of speak. Although you could taste all the ingredients separately, they went together seamlessly and perfectly. Thank you Guy for sharing such a wonderful recipe and the best to you in the Food Network. While this episode was airing, we pulled up the recipe and made it the following night. This recipe is rated as "medium," but I would call it more of an "easy." It really is not complicated at all, but the work/prep time is very accurate. As with any recipe the first time you make it, I was very thorough and read each step as I went along. I'm sure that the next time I won't even think twice about it. We really enjoyed it, as did our children. The cream and spice are very well balanced, and the richness is just right - not leaving us with that heavy, bloated feeling. A wonderful meal for an evening with friends - it comes off much more difficult than it really is!

I made this recipe last night for my son and his wife who go to Guy's resturant all the time. They said it was as delious as they get there. I could not fine the blackening spice so I typed it in my search engine and guess what, I found the recipe for the spice and I will use it on many things. This is a keeper. I've eaten this dish at Guy's restaurant and it's always been one of my favorites. The mix of flavors and textures is amazing - the tang of the sun-dried tomatoes rounds out this pasta to perfection! The recipe easy, but comes out with restaurant quality. The tomatoes not only add that special flavor, but they make a beautiful garnish. Add two slices of the garlic bread from this episode on either side and you can't wait to dive in.

I made this last night. Since we are a family on the go, I didn't have enough time to make the "Blackened Cajun Chicken" I subbed in the precooked Chicken strips from Tyson or Foster Farms. I let them soak up the white wine, flavors of the sun dried tomatoes (Cara Mia has them already juliened in olive oil -jar)The meal was still yummy!I will definately make it again. The sauce came out a nice rose color - from the Sun Driet Tomatoes. Also I used mini penne pasta, it worked just as well as fet. noodles. I also thru in fresh basil, italian parsley, and rosemary from the garden - GREAT JOB GUY! This recipe could easily adapt for a family on the go!

That's what my husband said...and that is high praise indeed! The printed recipe failed to mention to add olive oil to the pan before throwing in the chicken breasts, so I'm glad I watched the show. Very good, and as someone else said - it's a keeper!

Have made this dish twice now and it was excellent both times. My husband's only drawback the first time is that he was not a fan of the sweetness from the sundried tomatoes, so I substituted roasted red peppers for the tomatoes the second time, and it was just as good! We have enjoyed many of Guy's Dishes this summer.

This is the third recipe of Guy's that I've tried and the third success. After the first bite, my husband said it's another keeper. It was relatively inexpensive and easy to moderate to prepare. I thought that I may have trouble finding the recommended blackening spice, but it was right in the spice isle at Publix. This meal was delicious!

Absolutely loved this dish! The only thing is that the recommended Paul Prudhommes' blackening spice couldn't be used, since it has a warning on the package not to use inside - for outdoor cooking only. I used Paul's magic seasoning for poultry instead and it worked just fine. But Guy should have mentioned that on his show. Otherwise, pasta tasted terrific!

Guy's "Cajun Chicken Alfredo" was on fire!! I made this meal for my wife after watching Guy's show in the morning and it was just fantastic. Guy really put some backbone into this meal. Alfredo is generally not my style, but the sundried tomatoes lightens it up quite a bit - even my 3 yr old ate them - go figure! My hubby said it's one of the best meals I've made - with the garlic bread and caesar salad and of course a nice Pinot Grigio. Thanks Guy for making me a Star!

This dish is wonderful! I made all the recipes on this show last night and my husband and I loved it(not that he isn't easy to please) I didn't have the sun dried tomatoes so added DelMonte tomatoes with basil and put them in the Alfredo sauce along with the scallions. The garlic butter is going to be a standard for us from now on and the salad is the perfect companion to all the spicy flavors of the chicken...Made my own cajun spice from a recipe from the foodnetwork.com database. This recipe will be made again and again.

Half of my family loves spicy Cajun, the other half hates it! So I took Guy's recipe and kept the blackened chicken seperate from the sauce and added it at the end. It was so, so good. Even if you just made the alfredo alone, it's excellent with the addition of the wine.

The recipe was actually easy and fun to make. However, the end result wasn't as impressive or as good as I originally thought. I couldn't find his recommended blackening seasoning, so I had to use another. The recipe was real bland and I had to add more salt in the end to get more flavoring.

YUM - YUM yummy! LOVED this pasta dish! Like a few of the other reviewers, I couldn't find blackening spice so I just used a cajun seasoning mix that actually worked very well. Too, I am not big on garlic, just a personal problem on my part. I used shallots instead - gave it a great sweet onion flavor. It does make a ton, but I bet the leftovers fly out of our fridge. I did not do the bread this time around. Maybe next time I'll do 1/2 the pasta recipe and then do the bread too. A can't miss favorite for my family. Keep um coming!

This is the best Chicken alfredo I have ever tasted. I am not usually a big fan of alfredo sauce but, combined with the cajun chicken spices, YUM YUM!!!! This was also very easy and quick.

After making a huge amount of the last Guy pasta recipe, I halved the amount of pasta and sauce and it came out perfectly. It fed my family of 4 with leftovers. I couldn't find "blackening seasoning" either - but used creole seasoning and it turned nice and black. Even the baby loved the chicken, both with the sauce and without it. Thanks for another great one Guy! I will definitely make this again.

The serving size was also quite large for my husband and me but the leftovers were excellent. The recipe was very easy to make considering it tasted like it took a lot of effort to make. I used half and half instead of heavy cream to reduce the fat and it was still delicious. I did however use a little cornstarch to thicken it up, and the consistency came out perfect. The recipe includes just the right amount of ingredients and flavoring. Guy is great...I love the show and it is nice to have normal recipes that do not require a special trip to the grocery store - searching high and low for unique ingredients!

This recipe is by far my favorite dish to make! Actually it's one of the first meals I have ever made. The first time it did take me over an hour & 1/2 but after a few tries i had it under an hour. I added a little extra seasoning to the chicken to help kick up the sauce. Flavored pasta makes it even more deliciouso. Everyone I have made this for has raved about it and even my 1 yr. old niece slurped up every last noodle!

This recipe was fantastic. The blackening spice gave the chicken some serious kick. I wouldn't suggest eating the chicken by itself because it is way to spicy but it was great in the pasta. The spices on the chicken came off and and incorporated into the sauce which made it even better. I wouldn't change a thing and we will be repeating this recipe many times over.

The concept of this recipe is fantastic! However, for those who are reading these reviews before you make it, let me offer a tip. DO NOT USE TONY CHACHERE'S CREOLE SEASONING INSTEAD OF BLACKENING SEASONING!! It turned out waaaayyyy too salty and way to spicy..even for me. I couldn't find blackening seasoning at the store so I thought I'd replace it..never again !! But with that said, the dish was great. If it weren't for it being too salty, this would have been a great success. The sauce did take a while to thicken. I will definately make again....with the proper seasoning!!

I made this for company and cooked the chicken in the morning because the house has lots of smoke due to blackening the chicken. Also, cooked the pasta early, tossed with olive oil and kept it in a zip-lock bag. You can clean up the kitchen before company comes by cooking everything early, and leaving the sauce last. I added sauted mushrooms along with the sun-dried tomatoes. Didn't use as much blackening seasoning due to not knowing if guests would like it that spicy. This is a very easy, good meal, anytime.

I made it for the first time yesterday and it was great. I didn't find the Blackening Spice in my local grocery store. And so the only change that I made was to substitute the Blackening spice with Emeril's Original Essence + oregano + cayanne papper. Those are the kind that comes in a jar, that you buy with the marindated peppers??? The ones I have on hand are the ones that you buy in the produce section.. I think those are the ones that come dehydrated and needs to be soaked and rehydrated? Can I use those?
