Modern because, well, it's OFF THE HOOK!Grillin the romaine brings out a sweetness. I did drain off much of the grease, adn added just a tspn of sugar, and I used a good gorgonzola. We had this with the Bloody Mary Flank Steak (which we also loved) but the salads were SO great, and so filling (especially when you eat as much as we did!) that we had them as a stand-alone meal the next time. The combination of cheese with bacon almost gives it a peanuty taste. Believe it or not there are different tastes of blue cheese but suffice it to say that that the sharpness of the cheese is cut buy the vinaigrette. This is the next best thing to Ceasar Salad. Guy's recipes are much closer to home for me. This salad looked great but after I made it, it was far to greasy tasting. So I adapted it by cooking up the bacon then pouring out the fat, adding more olive oil and throwing in the onions, then adding red wine vinegar to carmelize them. I didn't grill the lettuce because I like cold crispy lettuce. I put the onion and bacon mix, into a bowl, added more olive oil and vinegar with fresh oregano and sweet basil, salt and pepper to taste. Poured over the lettuce and loved it. It is hot and cold, crunchy and soft, salty and sweet! I didn't feel like frying bacon but my husband talked me into it. It was so good with the romaine. We didn't have any blue cheese so we used parmesan. It was great but I bet the blue cheese is even better. Tonight we just grilled the romaine and topped it with bottled balsamic dressing and parmesan. I am hooked on grilled romaine! Thank you, Guy, for a great basic recipe. And I may be the only one to say this (and I voted for you!) but I find your rings and the other jewelry to be distracting! Even though it may be expensive, it looks kind of cheap. It was so easy and so tasty, but I couldn't convince my husband to try it. I just made it again this week and he just went on and on about how good it was. I don't usually make anything with blue cheese because of the high fat and calorie content, but I didn't have to use a lot and it truly complimented the blend of flavors of it all. It had just the right amount of tang from the balsamic vinegar, smoky flavor from the bacon (buy thick bacon), and the bleu cheese crumbles added a richness to it all. When I first tasted the dressing without the romaine, it seemed too tart. But once it was drizzled over the lettuce and topped with the bleu cheese - it was incredible! It was also a nice complement to the Bloody Mary Steak! This will be a regular salad option instead of "bag o' salad" for dinner. The onion compliments the bacon, they both take on the balsamic flavor, which is then brought out by the bleu cheese. When you bite into it, it is as if each ingredient hits your tounge separatly and then all at once. A+ Guy, really tasty. However, I followed what Guy did on the show and lightly seasoned the romaine before grilling and also cooked down the dressing a bit after adding the balsamic. Also, my bacon rendered a lot of fat, so I drained off a little before adding vinegar and then used a bit more olive oil as it cooked down. This would probably also be good with grilled radiccio or other sturdy lettuce.
