I have made mushroom soup before, but I didn't care for this one. Maybe it's my pallet, but the liquid smoke tasted very synthetic and the soup in general was very bland. I didn't watch the show this recipe was featured on but probably should have because I found the recipe instructions to be a little confusing. It called for 1 teaspoon of liquid smoke but the instructions say "3 drops" which isn't the same, and the roux instructions at the end were not clear. I have tried many of Paula's recipes and this is the first one I did not care for. Bella bella! Once again, I'd only use 4 cups of broth and 2 cups of cream. The secret to cooking portobello mushrooms, no matter what the recipe, is you must always spoon away the gills, leaving just the mushroom itself. I made the roux in a small saucepan. After the mushroom/broth/seasoning mixture simmered I used an immersion blender to mince the mushrooms. I then added the cooked roux and 1/2 and 1/2 instead of heavy cream and simmered for another twenty minutes. The color is not too appetizing due to the gills in the portobellos, but the flavor more than makes up for it. It was smoky and complex and creamy and it finally convinced my husband to let me buy an immersion blender. ;) It is only the two of us so I will cut the recipe in half next time as this makes a LOT of soup. This is no exception. She is a genius. I just happend to catch a few minutes of the show where she made it, and I had to try it. It just so happend that I had everything on hand to make it except heavy cream, I just substituted sour cream and still turned out great, but a little on the thick side. I like my soup thick like paste, so it worked great for me. Yummy, Paula, you are the southern grandma I never had!!! Keep it up! I cooked it a little less than 20 minutes after the roux was added, but it tasted perfect. I think the liquid smoke gave it a great kick, but could definately be omitted. One thing though, I made ours with the recipe from the show and just noticed that the recipe on the website says that it calls for 24 ounces of stock when the show calls for 8 cups (64) ounces, so there is a typo, hopefully someone fixes it.
