I just loved it, however I did scale it down a bit. I used a couple of forkfuls of mayo, about 5 leaves of basil from my garden, 1 small garlic clove (minced), a little shake of extra virgin olive oil, a pinch of course Trapani sea salt and 2 grinds of black pepper (I left out the lemon juice). I spread it on both slices of buttermilk bread and sliced up 1 whole vine ripened tomato. I still have some of the mayo mixture leftover. When I looked at the recipe again after I finished my sandwich I couldn't believe the cup of mayo was for 1 sandwich, seems a bit much. Try scaling it down like I did, I'm telling you, it's soooo wonderful. So I made it in April, May, June with good tomatoes from the grocery store. It was really good. I can hardly wait to try it with tomatoes from our own plants this summer. It will be superb!!! A couple of tomatoes are getting red now, and I have fresh basil growing. Try the mayonnaise on other sandwiches also. I used fresh bread from the bakery and fresh basil from my friends garden. The mayo would be great on just about any sandwich. The only changes I made was to use canola mayonnaise, which is cholestrol free, and I used whole grain bread. But I think mistake #1 was blitzing the mixture in the food processor rather than whisking. The basil got chopped so fine I couldn't really taste it. I found some heirloom tomatoes at a local health food store, along with the other ingredients(other than the vegimayo which forced me to go to another store to get normal mayo)The mayo gained a lot of flavor after being in the fridge for a couple days. People, please realize that the mayo mixture can stay in the fridge quite nicely for well over a week, and it was never intended for the whole recipe to be used in one sandwich. |
