This is the best I've found. Very flavorful and thick. Adding in the other half of the split peas at the end gives a great tooth to this soup. My own special touch is I add about a cup and a half of thickly shredded carrots ...( I cheat and by the bag in the produce dept) to the soup. This makes carrot noodles as my kids call them. My mom never made split pea soup; however, my husband's mom did. I never ate it. When I made Parker's, I gave it an "E" for excellent since my hubby really enjoyed it. Two years later, to date, in fact, I made it again and added ham. My hubby loved it. My hubby does not like a lot of pepper so I did not put in what it called for and then he said that it could use some more pepper. did I flip? yes!! and added a little more. I only eat it by the teaspoonful from the pot and I can truly say that I really enjoyed it. I put the mixture in the blender and added a LOT of water to thin it down because it was extrememly thick. Very good (except I'm breastfeeding and I don't think it agreed with my baby). Not even close. I like the addition of potatoes and I like the thick texture...but, in my opinion, it just isn't a good recipe for split pea soup. There are better recipes for split pea soup out there. Try it and you will see for yourself. I am not sure where the other positive comments are coming from but I am a good cook, from a family of excellent cooks... I used less than half the oil and salt called for in the recipe and added about 1/4 lb of bacon. I also used whole baby carrots cut in half and very small (walnut size) dutch baby potatoes - oh, and I doubled the garlic. It was even better the next day. My grandson was very impressed with it as it doesn't have ham in it and he didn't think he would like it. He loved it and was very surprised at how wonderful it tasted without ham in it. The recipe is easy to follow and very healthy as we are all watching caloric intake. This is definitely a soup we will make often as it is easy to make, delicious to eat and last but certainly not least very inexpensive. I found chicken stock on sale and can use the leftover potatoes, carrots, onions, spices and olive oil for additional recipes. And so very healthy! Definitely a keeper. Thank you Ina! After reading the reviews, I decided to add a little extra salt and cook the peas all at once. I don't know who thought this soup didn't have enough flavor, but next time, if anything, I will cut back on the salt! Pouring the peas in all at once also cut the cooking time back to one hour. In addition, I had to add about 1 cup of water at the end to "thin" the soup out a bit. One more thing, be careful at the end to keep stirring, as it can easily stick to the bottom and burn. I didn't measure the oregano and maybe put a lot more in there than was called for, used some garlic salt and garlic powder (only had 1 garlic clove left) and used boxed chicken broth instead of stock it was very flavorful. I also put in some celery and extra onions. Next time I will add all the peas at the same time. Very impressed as this was my first attempt at split pea soup and I've already converted three with this recipe. Ina is the best, love her show, her cookbooks (own three) and of course her recipes. If you think your soup is too thin, it won't be the next day so keep that in mind and as another reviewer suggested, you can thicken with instant potato flakes!
