An immediate hit

User: Richard from College Place, WA    User Rating:
The first time I made this it was an immediate hit. Even my fussy 6 year old granddaughter liked it.It has become a regular for us. Please don't substitute regular black olives for the greek variety. It really needs the flavor punch of the Kalamata variety. I did marinate the chicken for 2-3 hrs before cooking.

This recipe was wonderful. I made a few substitutions and additions, though. Instead of Worcestershire sauce, I used soy, and instead of molasses, I used honey. I added Cayenne Pepper, too. Everything else I kept just the same, and it turned out so yummy.

This recipe was easy to put together with mostly pantry ingredients. Not the usual ho-hum chicken - very tasty blend of flavors. Great with the roasted rosemary potatoes which can cook in the oven at the same time as the chicken.

Nothing Special Chicken

User: Eileen from New York, NY    User Rating:
While the recipe sounded as though it had promise, the result was bland and disappointing. The recipes that I have created for my upcoming cookbook far excede this by light years. And they don't take any longer to prepare than this one did.

This was such an easy recipe. I was disappointed at first because I went to the store just for the molasse and then dropped it in the grocery bag in my driveway. Yikes.. I can be a cluts. Anyway, I wasn't going back again so I just elminated this small ingredient and went for it! Despite the missing ingredient it was a winner in our house. We always find a 100 ways to make chicken and now this is 101! Yummy!

Winner! I used the olive salad in a jar (the kind used on muffaletto sandwiches)over the top of the chicken instead of the kalamata olives, only because I didn't have any kalamatas in the house at the time. Worked really well! I also used both chicken breasts and thighs. Many kudos received! Very flavorful! Thanks for the recipe.

User: Phil from Newcastle, WA    User Rating:
I found this chicken recipe really really good. I have my own grilled asparagus recipe that matched the flavor profile well and used that. I did cook it in a smaller pan though (rather than a large roasting pan as the recipe suggests) and think that might have let the flavors really stick around. I just imaged too much surface area in a large roaster.

My father and his wife were coming over for dinner and I really wanted to impress them since she was quite the cook. In the end, she asked ME for the recipe! Super easy to make. I did marinade for about an hour. I am pretty sure this is my mistake but I used whole chicken breasts and they did not absorb the tastes as well. I would use smaller pieces next time. Amazing!

User: valerie from san francisco, CA    User Rating:
Although I did make a few changes, we really enjoyed this recipe. It is different, easy, and somewhat low fat. Used a whole frying chicken that was brined for 1 hour in a 1-gallon baggie. Poured off the brine but did not dry the chicken. Doubled the ingredients, except eliminated the salt due to the brining. Put the ingredients into the baggie and marinating the chicken for one more hour. Instead of Kalamata used green olives packed in water, which lowered the fat some. Baking time increased to about 50 minutes. Served with couscous cooked with a handful of dried fruit, raisins, and onions in chicken broth. The brine broth and doubling of marinate provided more liquid to spoon over the chicken and couscous

Good, but recipe is too skimpy
03/25/2006 at 12:57am
User: Angela from Irvine, CA    User Rating:
In order to make sure that the marinade/sauce penetrates the chicken, I would recommend marinating it for at least a few hours, if not overnight. Also, the recipe results in too little sauce - I had to triple it in order to adequately coat two pounds of chicken. Otherwise, it's too bland and the chicken on the inside is flavorless. And this is coming from someone who doesn't like salty food.

Absolutely Fabulous!

User: Anonymous    User Rating:
Incredible blend of flavors. The olives make the dish, so don't omit them. I followed the advice of others and added about 1/4 cup of olive oil to the marinade. Great reheated for lunch the next day. Will become a staple in my collection of chicken recipes. Thanks!

Tasty but a little empty
03/22/2006 at 09:41pm
User: Rebecca from Union City, CA    User Rating:
My family and I really enjoyed the flavors in this recipe, but the sauce felt sort of empty, like it was lacking in body to stick to the chicken and needed another element added to it. Perhaps I'll try the other reviewers' comments and include some olive oil the next time I cook this. Overall, a pretty good recipe.

03/18/2006 at 09:01pm
User: Susan from Alton, IL    User Rating:
This chicken recipe was tasty and easy to prepare. I liked the oven prep and used this method for a follow up chicken meal. I love green olives so I added some with the black and it added more zip to the flavor. The amount of chicken allowed me to make the mexican lasagna only though not the chicken caesar salad. With two small children, I'm sure Robin's portion size works but for a family of 5 w/older kids, 3lbs will give you two recipes. Robin, your show is great! It truly speaks to the busy working mom. Keep it coming! Thanks!

My husband loved this and even my kids who think adding salt and pepper is too spicy! This recipe reminds me of something I have made at one of those prep kitchens where you prepare a bunch of meals all at once and store them in the freezer until you're ready to cook them. The only difference was the other recipe uses green olives instead of kalamata and also adds prunes- approx 1/4 cup rough chopped. It sounds really strange but tastes wonderful. You have to try it. Tangy and sweet.

I made the entire meal; chicken, potatoes and asparagus. We will DEFINITELY be having this again. Can't wait for the mexican lasagna tonight!

Good Flavor, But Needs Liquid

This was very tasty, but as others have said, the dish needs some liquid or sauce. I added about 12 halved cherry tomatoes to the pan for the last 15 minutes of cooking. I'll also add some olive oil to the marinade next time.

Loved it!

I love the combination of flavors in this dish, but the chicken breasts came out dry (and I undercooked them a bit, too.) Next time, I'll add a little more liquid or olive oil, as suggested by other reviewers.

This was a pretty good recipe but don't think I would make it again. The problem I have with Robin's recipes is that preparation for three days of food doesn't really work for most households. Apparently she doesn't cook for teenagers and grown men.

LOVE THIS!

Really Good Chicken Recipe!

This was excellent, except for the all the onion. I would use scallions next time and only 1/4 cup. It did not seem "liquidy" enough so I added 1/4 cup olive oil and that did the trick. I will definitely made this again.

Very easy and good

We tried the chicken last night. It was very easy and had a lot of flavor. I cooked the 3lbs as suggested. We are using the remainder in the suggested recipes.

Surprisingly Good!

I wasn't sure about this one at first due to the strange flavor combination, but it made a very tasty chicken that wasn't the usual Mediterranean flavors. The chicken is great later in the week too! (Oh, and the recipe was very, very easy)

Loved it

I didn't happen to have molasses on hand but didn't miss it. The flavors were wonderful - the onions mellowed right out and it was so easy. I recommend that you try this recipe soon!

Tastes good...

for being healthy. But overall kind of lacking in flavor. I even let the marinade soak for several hours per other reviewers. I think there needs to be more lime juice in the marinade. As for the salad dresssing...don't waste your time. It was pretty bad. Lime and dijon don't go well together! But I do enjoy Robin's show...it's great for busy people who don't have time to prepare lengthy meals! I will keep trying your recipes.

This recipe was a hit! I love kalamata olives, but I don't think they added anything to this recipe.Feel free to leave them out.I cooked the recommended 3 lbs. and was able to make the Mexican Lasagna from the same show (see my review on that recipe). All in all, a great episode!

I made this dish for dinner tonight and the house smelled WONDERFUL! I knew if the house smelled that good the chicken would be awesome! I took my first bite and was in heaven. I followed the receipe pretty much except I put in alot more lime juice and about 3 tbsp honey. That way I would have more of a sauce. What a treat and a great way to spice up chicken night! I will be making this again!

I changed the recipe around a bit by using green olives instead of kalamatas, real maple syrup instead of molasses, and added 1/2 C of dried cranberries, 2 T of olive oil and 1/2 C of white wine. I added the additional liquid because of some of comments saying they wished there was more liquid. The recipe was just perfect and my husband loved it!

Excellent!!!
