The risotto was superb, and after this meal, lamb is my new favorite meat. For the lamb I basically followed the same cooking times as the lamb, but when I seared the meat I added onion and garlic. I did this in order to make a gravy when was done. So easy to make, and so very delicious! The risotto was also very easy. Based on the reviews I only used 1/4 oz of dried mushrooms in 1/2 cup water and increased the chicken stock to 1 1/2 cups. It was delicious! If desired, bone-in double chops can be substituted for the tenderloin (they tend to have higher fat content/more flavor). Follow the same directions; just use a meat thermometer to monitor the temp -- yank them at 145 degrees, and tent with foil while resting. For the risotto: I used dried chanterelles (they're less pungent) substituted parmigiano reggiano (didn't have pecorino on hand), and added a few drops of truffle oil. Delish. Dave rocks my socks. I'm not a fan of pecorino cheese, so I used asiago/romano (how can ANY cheese be bad?). The pork was quick and tasty; on a whim, I deglazed the pan with a little apple cider and whisked in a little dijon. I liked it, but the pork tenderloin plain (as you made it) is good, too. I used chicken broth instead of stock and increased the amount to 1 1/2 cups as I left out the wine. I bought 1/2 oz dried porcini mushrooms. From there, I followed the recipe. It came out rich, flavorful, and creamy delicious. My husband and I could have eaten it all! The tenderloin was such an easy recipe and was seared on the outside, juicy inside, with great flavor from the rosemary. I never make risotto because I do not want to stand in front of the stove for 30 minutes. I didn't have mushrooms so didn't use them. I would not hesitate to use fresh mushrooms. I probably should have used more cheese. But it was great anyway and easy. I didn't make the pork, because I was afraid to overcook it and dry it out, which I usually do. The meal in this episode caught my eye today: and, I felt compelled to make it for my family. The risotto is exceptional especially without the constant attention and stirring. We like our risotto extra creamy so I used a full can of chicken stock and some extra wine to plump it up. Additionally, I cooked it about 20 minutes longer and added more cheese at the end. The pork tenderloin was great - I added a balsamic reduction to heighten the flavor. The Tarte Tatin was just scrumptious with vanilla ice cream. Easy, delicious, and perfect for entertaining.
