These shortcakes are absolutely the best - tender, flaky, moist. I served them with fresh blackberries right out of the oven while they were still warm. Soaked up the juice from the berries and melted the whipped cream just a little. Life is GOOD.

I just served this recipe for brunch. Shortcakes were easy to make, delicious and eaten with great gusto. This dessert will be a regular for us with whatever berries are in season. Thank you Ina

The peaches and raspberries were a good change from the normal strawberries, but I didnt care for the shortcake recipe. It wasent the ingredients, but the way the directions wanted you to combine/assemble them. (Probably the whole individual shortcakes is what through it off.) I think I'll stick with making a whole shortcake.

I saw these on the show in late May 08 and made them right away. I agree with the other contributor that they were too salty and needed more sugar but also easy to make. Delicious but more like a biscuit than what I was expecting. Next time, I will make a citrus and vanilla bean sugar to incorporate into the dough. I had a smaller cutter so my leftover shortcakes made great "bread" for mini sandwiches the next day.




Shortcakes come up short

Short cakes needed a lot more sugar and the kosher salt was too salty. Texture and shape (used larger pastry cutter) was perfect. Next time I will use more sugar and table salt.

Shortcake made with Bisquick and, of course, Bisquick shortcake is much easier!

I was surprised how easy this was to make and how flaky the shortcakes were. Go great with any fruit. Looked impressive.

this is a great recipe! - the shortcake are really what a shortcake should be!! - Contessa is amazing. I made these for a dinner party a day before and they did great.
