I would also add fried tofu and chunks of carrots in the stew. I didn't use the slow-cooker, rather cooked in a pot for 2 hours and produces similar results. I had it hanging on my refrigerator for more than a year before ever making it. Now that I've made it once it will permanently be a part of my reportoire. This is quite simply one of the best tasting dishes I have ever had. I served the pork over rice which made it seem more authentic. Do yourself a favor and put this on your must-try list! The pork was so tender at the end of 6 hours in the cooker that it fell apart, so I took the opportunity to add some (cooked) soba noodles to the shredded pork and remaining broth and made a wonderful soup. Next time I'll plan to add some vegetables. The chicken stock, soy, and added salt did make this very salty. My husband had it with rice and loved it. I had it with egg noodles like a beef noodle soup and it was delicious! I also added some veggies that I had on hand (winter melon and bok choy). It was a bit salty for a soup so I'll probably cut down the soy sauce next time. Definitely going in my recipe box!
