I followed the recipe to a "t" but the results were disappointing. Overall, it tasted zippy - something different, bold and interesting. I also loved the green sauce, and the combo of goat cheese with spinach and garlic. I found it simple to make, but here is the problem. My boyfriend, who usually loves garlic, could not choke more than 5 bites down. He said it was TOO garlicky. I did taste the garlic, but didn't think it was too strong. He also said it was "too green" which it is, but he said it tasted "green" too (whatever that means). Even though my bf didn't like it, I still enjoyed it...until I woke up at 4 AM with garlic coming up my throat. It was so gross! For the rest of the morning, my stomach churned and I could still taste the garlic in my throat all day long - not fun. So be careful when you make this - you don't want to wake up at 4 AM with garlic. My recommendation is to cut back on the garlic - A LOT. Then this will be a good dish. Other things to consider is this dish is really green, so you may want to include a colorful dish (other than a salad) to make your plate more appealing. It was somewhat bland, maybe because I kept expecting to taste pesto. I did not have any fresh garlic, so used jarred instead and it was not overpowering in the slightest. I made this as a side dish and had tons left over. Next time I will cut pasta in half, will try using regular cream cheese instead of low fat and will definitely add sprinkled goat cheese to the dish, as I thought it could really use more. I saw that leaves were left whole, so I said what the heck! It actually still tasted great! These cheeeses all melted over the hot pasta and I just mixed everything well. It created a cream basically all on its own. The only difference was the spinach was whole leaf, not chopped. WHEW! SO happy with the turnout. It was ridiculously fast to prepare. I boiled the water and then threw the pasta in and by the time the pasta was done I had made the sauce and it was perfect. Also, there is really no clean up since you just dump it in the food processor and then one bowl to serve it from. My FI and I came up with the idea to throw a few chicken breasts on the Foreman when you put in the pasta and then serve a little bit of the sauce over the chicken. The tiny bit of cheese in the sauce makes it taste very rich and indulgent but it is actually super healthy! This has become one of our weekly meals because of it's ease and fantastic taste! Seriously, this takes less effort and time than heating up a pizza, and it is healthy and delicious! I added sauted 1 sliced up scallion, 4 chopped up garlic cloves and added this to the spinach sauce. Then I added a 1/4 cup of chicken stock. I then sauted 2 chicken breast with salt, pepper and Herbes de Provence. Heated the spianch sauce just a little added the sauce to the pasta and topped it with sliced pieces of chicken fresh chopped flat leaf parsley and the rest of the cheese. Wow! B/c the basil is overtaking our garden, I gladly jumped at the chance to substitute that for the spinach. You can also add small cherry tomatoes, whatever veggies are on hand, to mix in and make it colorful. Melting cheeses could work too, but the goat and cream cheese melted 'creamy' and tasted fine. This recipe to me is a starting point, not the final destination! Lots of possibilities to enhance this one. It was simply delicious, fast, lite and healthy, yummy!!! I cut it out and kept it, but my version calls for 3 oz. goat cheese, not any cream cheese at all. Goat cheese is not my favorite thing in the world but I tried it. It was a beautiful looking dish I must say, but next time I will try 1 oz. cream cheese to cut down on the sharpness. Also I used only 1 clove of garlic after reading these reviews and even that seemed too much for me. I am a garlic lover but it somehow didn't work in this dish--it was too overpowering. Overall though, quite tasty and I will definately try it again. The spinach with the whole wheat pasta was delicious! You literally cannot mess it up. I made a few changes to make it even healthier: instead of the goat-cheese and cream-cheese combination, I used about equal parts low-fat cream cheese and fat-free cream cheese and it came out fantastic. It tasted very rich, definitely not "light." The spinach sauce is fantastic on the al dente pasta. This is perfect if you love garlic. Some may find it a bit overpowering; if this is the case, cut the garlic down to just 2 cloves (vs. 3). Also, beware that she says it makes 4 main dish servings or 6 side dish servings. Well, this seems to be a huge underestimate! I made it last night and came out with about 6-7 MAIN dish servings, when served with a salad. Definitely try this recipe--you won't be disappointed!
