I used frozen shoestrings & thawed them. I only baked them the first time for about 5 minutes, then I added the parmesan & baked until the cheese was melted & just starting to turn golden. I did leave plenty of room for the fries to cook & didn't have any problems w/ them either being soggy or sticking together. When ready to bake I preheated the oven, stirred a bit to make sure they were all coated, then baked as directed. Sprinkled with the cheese, back into the oven and they were wonderful. Mine did not stick together, although I did not clump them, gave them some room. They browned nicely and I will never fry a french fry again. I highly recommend this recipe. Thanks Michael. The fries didn't brown after 10 minutes as the recipe said, which was the point where the cheese should have been added. In fact, they never browned at at all - not after 30 minutes in the oven. At the end of cooking, the fries were pale, soggy and stuck together with parmesan cheese. I thought a lot more work would be involved but after skinning and slicing the potatoes, your work is over. I would recommend using the broiler for the last 5 minutes for a little more crisp. This is how to solve the soggy problem: crank the oven to 500, and make sure you preheat it also, make sure you put the fries on the top shelf, and also, increase the cooking time. This goes for my oven, at least. You have to check, since everyone's oven is different. If you use frozen fries, you have difeated the purpose of not frying them, in which case, follow his recipe, but use oil heated to 375 and then season accordingly. If you following the correct baking instructions, there is no reason you should have soggy fries! And my argument with my family was, "In-N-Out fries aren't brown either, and they're delicious". They didn't buy it. So we argued a bit more, and reminded ourselves that we're talking about a french fry. Mine only browned on one side, and I used a Parmesan, Asiago, Romano blend of cheese. The only problem is that I can't stop eating them. This is now my one and only recipe for french fries! I cranked up the oven temperature to 450 and it still did not help. I did have them spaced well, and my oven is accurate. I will not precook next time as I think they will cook on their own. Perhaps he did not bake them long enough, but mine were golden brown and crispy on the outside. There is no need and the result is a soggy fry. Just cut them cut and sprinkle with olive oil. Place in 450 degree oven for about 25 min. They sprinkle with parmesan at the end. Now they are good. I would not recommend using frozen fries as some others have recommended if you are looking for a lower fat alternative since the frozen fries are fried. I made the fries to go with our lunch the very day I saw them made on Food Network and ended up making them again as a side dish for our dinner that same night! The fries turned out wonderful and since they are baked in olive oil they are healthy alternative to eating fries from a fast food joint. Especially for those (me included) that LOVE french fries. Then they never really browned, then put on grated cheese and they then just got leathery not crisp on outside tender inside. I think I might try it like others suggested with frozen french fries.
