I served these sanwiches on a snowy day from left over Christmas Turkey. My husband and 6 boys loved them!! "Thanks Mom!" echoed through-out the afternoon. Thanks to you I was a popular mom for the day... that's tough to do with a house full of unique boys and men, and a mom with rules.

I watched the episode Michael made these and had to make them for dinner that night...not having ground turkey on hand or fresh sage, I did have to make a couple changes. I used hot ground italian sausage & hamburger in lieu of the turkey AND fresh basil instead of sage. They were outstanding! My kids loved the twist on my regular spaghetti & meatballs and raved about the sandwich style. The mozzerella in the middle was fabulous! I will definitely make again for my next football party.

I had a chance to see the episode where Chiarello made this, so I was at bit of an advantage (compared to if i just followed the online instructions). But do check Chiarello's website for the complete instructions because it really is a good recipe.

This recipe just doesn't seem to work. It was a lot of preparation for something that turned out to be a stuffed burger with sauce on it. I generally like his recipes a lot and was anxious to try this one only to be disapponted by the outcome. I am very glad that I did not try it out on guests before tying it out on my husband.




Cooking times are off! Served raw!

The cooking times of 1.5-2.0 minutes of frying the polpettone are way off. It needs to be longer. Even after having the polpettone simmer in the sauce for 5 minutes, they were served raw inside. We had to take them out of the sandwiches and microwave the polpetone for several minutes until done. Although tasty, I think next time I will try them with ground beef.




How about giving us the whole recipe???

The food is great, but if you look at the recipe, it tells you to preheat the oven, and then makes no more reference to the oven in the rest of the recipe. Luckily for me, I Googled the recipe name and found out that Michael had made this recipe on Napa Style, so was able to get the CORRECT recipe from there. The one on Food Network neglects to include the instruction to PUT THE POLPETTONE IN THE OVEN FOR 10 MINUTES BEFORE PUTTING IT ON THE SANDWICHES. Shame on you, Food Network. And this isn't the first recipe I've looked up that was missing directions, which I've either been able to intuit or find somewhere else. What's the use of publishing the recipes if they're wrong????

I thought these burgers were very tasty and easy to prepare. The next time (leftovers) I serve them, it will be on the plate with noodles or a pasta of some sort.

Not much flavor in this recipe. Nice; but nothing special. Maybe a different cheese with more tang? The motzarella was just creamy and didn't enhance the dish.

I was really excited to make this recipe but it didn't live up to my expectations. My oil may have been too hot because I didn't feel like the meat cooked evenly.

Wonderful taste. We'd make it again. A very filling and satisfying meal. We halved the recipe and still got 5 sandwiches out of it. And even those were too thick for both of us. We'll try this again but will sacrifice the cheese in the middle (which was a lovely surprise while eating!) and just make single patties. Probably defeats the purpose but it'll be easier eating!

I was so excited because my mom made this recipe for us tonight. It looked so good.....but it didn't taste like it! There was so much lemon flavor that it overpowered everything else. I would love it again, just no lemon zest, YUCK

I made these and for some reason I didn't have a problem like the rest of this gang here - the 2nd time I made them i opted out the rolls - and served it with some penne with just O & Garlic. - alot better!!! I love this dish!!!!

For years my family's favorite meal has been home-made chicken cordon bleu. This recipe now equals it! I didn't have ground turkey, so I used ground round. I tried it the first time as a sandwich, but the buns disintegrated. Now, I serve it with pasta - suberb!!!!

It takes a lot of time for such a poor product. The mozerella amount isint right for the recipe; in addition, the texture is off and the taste is poor and lacking in much flavor. I tried it with the fries from the same episode that also werent worth my time.

How funny -- when I was going over this recipe I wondered why it said to use an ovenproof pan...now, I know based on the other reviews is that it's missing some info! Anyway, I still made it as is and won't be making it again. I learned my hubby doesn't like sage and I'm not a fan of ground turkey. I liked the sauce I used! It's hard to give a fair review when Food Network didn't publish the recipe the way it was supposed to be but taste wise, it turned out to not be our thing.

As per suggested from other reviews, I searched the Napa website to get this entire recipe. I didn't care for this recipe. The turkey didn't have much flavor at all.

I went to Michael's website napastyle.com to get the complete recipe, which I would recommend if you want to make this. I made these monster burgers with ground turkey breast and thought they were just ok. I might make them again, but more than likely not - I just wasnt wowed by them like I thought I'd be. Perhaps i'll just use the recipe to make moist turkey meatballs for Sunday sauce.




I am hoping my family does NOT get food poisoning!

This recipe would have been great except for the often noted, INCORRECT directions. I too, wondered why I was having to cook this in an oven-safe skillet, but with kids running around, phone ringing, didn't figure it out until it was too late and my first two kids were digging into practically raw turkey burgers (which they got out of the microwave as I was trying to cook them done)! Having recipes wrong is not only exasperating, it is unhealthy!

I love this recipe. I made them on the grill, more like a turkey burger, topping them with some mozzarella at the end. They were delicious. Great ingredients. The best turkey burger I've ever had.

In response to missing recipe directions, this recipe has been changed. Originally he breaded these patties, fried and then baked them ( as he has the recipe on his napa style website)and there was no sauce. The foodnetwork version skips the breading and just has them fried and simmered in sauce. I made these the 2nd way and thought they were just ok. Basically a big meatball served on a roll w/ tomato sauce. In smaller size they would make great meatballs on pasta, but it could use a little something for some 'zip'.

The few ingredients, along with the freshness of the ingredients involved made Turkey Polpettone tasty, aromatic and flavorful. The ease of preparation was great. The fresh sage was just the "fresh" flavor and aroma that teased our tastebuds as everything cooked. Although we chose not to make them sandwiches. This recipe is going in my stash and the family is already asking for it to be made again! Five stars is all they would let me give - I'd definitely double that to 10.
