The meat came out perfectly and the sauce thickened up nicely without modifying the amount of flour like the other reviewers suggested. I only used one cup of wine which I thought was perfect - I didn't want the flavor to overpower the dish. Some other modifications I would do next time are to add more seasoning - more garlic maybe. Also, I would probably add the potatoes maybe a half hour before the dish is done - I thought they were a bit too mushy. This has to be the BEST beef stew I have ever eaten. Nothing was overcooked in this dish at all! And browning the beef in butter just gives off the most amazing aroma and flavors the beef so well. My family LOVED this stew. I only made two little changes... I added button mushrooms when I added the potatos, and I threw the fresh green beans in when I added the potatos instead of waiting. My 13 yr old daughter doesn't like so much snap to her green beans, although I would have loved it. They are still firm with a little crunch to them when added with the potatos. This stew is absolutely amazing, and my family and I will be having this again many times over. The best my family and I have ever had. I used the amount of wine and broth as the recipe called for but added in a tablespoon or so of cornstarch in at the end to thicken it up some more. I also sauteed 4 cloves of garlic in along with the carrot and onion mixture. Even better the next day for sure. Awesome served with sourdough bread or in bread bowls. This is a great recipe. My observations: after two hours, it wasn't done. I ended up cooking it for another 90 minutes. My *simmer* may be lower than yours. That's OK. Stew shouldn't be rushed. I have tried more recipes for beef stew over the past 20yrs and none of them have been this good. I used a Cabernet Sauvignon and it adds an incredible richness and tanginess to the broth. This recipe would be so easy to double or triple for a big crowd. Next time I make it I'm going to add some mushrooms in with the onion/carrot mixture. This will forever be my go to beef stew recipe. It was little thin like other reviewers commented. However, I'm surprised that more people didn't comment on the smoke that you can generate while browning the beef. After browning the first batch of beef, my entire apartment was filled with thick smoke even aftr turning the heat down. You can achieve the same result if you cook the beef at a lower temperature for a longer period and you won't smoke yourself out of your apartment. But all in all, it was a tasty dish.
