Oh, and salt, pepper olive oil & basil. Also, I didn't have the prosciutto, and it still turned out great. I'm not a vegetarian, but this recipe is yummy without the meat, too. We loved them, including our 3 1/2 year old! I altered the recipe a bit, exchanging the spinach for italian sausage and portabella mushrooms. I did about a half pound of the sausage and just under 6 ounces of portabellas. I fried the sausage first and then after removing I fried the mushrooms with a another dab of olive oil. Regular lasagna can be so messy to cut and dish out, so the individual rolls make it so much easier to deal with. I made this with my own red sauce, which was good- just like regular lasagna. It tends to get a little dry- maybe leave out some of the parmesan from inside the rolls. You definitely need the extra sauce on the side. I made this with whole wheat noodles, which tasted fine- I couldn't tell the difference. I definitely recommend making this recipe. Leftovers are great too! Great twist on lasagna and is very easy to serve single portions with a great presentation. The only thing I did differently was to use 6 lasagna noodles because 15 ozs. of ricotta is not enough for 12 noodles. I also added 1 clove of chopped garlic and a 1/2 a tsp of red pepper flakes for a hint of spice. This recipe is off the charts. Thanks Giada! I never use the white sauce since we're all red sauce fanatics (and never from a jar!), but the taste is still wonderful. I've at times left out the prociutto or substituted something else (diced, cooked portabellos, roasted red peppers, etc.), depending on who's coming for dinner. I used Giada's quick marinara sauce recipe, which I make in triple batches and leave in the freezer. It's my husband's favorite sauce, and having it on hand makes this dish go together quickly. First, the positives: It makes a better presentation at a dinner party than when serving regular lasagna. It tasted pretty good and I did get compliments. Now the negatives: The bechamel sauce is bland, and isn't even worth making. It adds nothing and is time-consuming. Using only one cup of marinara sauce during the cooking process will leave you with dry lasagna,especially in a 450 degree oven, which is too hot for cooking pasta. I used two cups of home-made sauce, cooked it at 400 degrees, and it was moist. 4 oz. mozzarella is not enough and that should also be doubled. One of my guests asked if it was vegetable lasagna, and I did use expensive prosciutto, but you could barely taste it. (There is a reason chop meat and sausage are usually the meats of choice in lasagna). The actual process of making the rolls is easy, but none-the-less very time consuming and more involved than the normal procedure. In conclusion, I have been cooking for 35 years, am considered a very good cook, and think you would be better off with a MUCH tastier, easier recipe, such as Emeril's 1-2-3 Lasagna. I would change the order of things as listed (can't remember what order she did them on the episode). first do the lasagna rolls, and THEN the sauce, pour in the baking dish and lay the rolls down. I did the sauce and then did the rolls, and by the time i was done, the sauce had thickened way too much. I especially liked the bechamel sauce instead of just tomato sauce. Try using the bechamel on the top of the dish to finish it off and the tomato sauce on the bottom. In my opinion, it really gives the dish a very creamy consistency because it seeps thru nooks and crannies. I make this dish when I want to impress company! It's one of my favorites. Thanks Giada!
