It's so-so. I'd actually give it a 2.5. It's very custard-like, actually pretty mushy. I baked it FOREVER too. When I saw that it was mushy I was hoping it would be like a giant macaroon, but no. My boyfriend also thought that it wasn't sweet enough. Anyway, I followed Paula's directions, but left out the crust (too fatty, and the custard is what I was after), just pouring the mixture into a greased 9" ceramic dish, and reducing the heat to 325 when the coconut started to brown rapidly. Without the crust to balance the sweetness, the 3/4 cup sugar is a little too much, so I'll probably cut it back next time (even less guilt!). Still, delicious results with so little effort! Other people have mentioned that the crust burns with the way the recipe calls for the pie to be baked originally, but after baking this pie more than once, I guarentee that baking it the revised way makes the pie come out beautifully. I had a hard time finding it myself. I combined this recipe with another of Paula's (Lua). Used 1/2 cup of milk and 1/2 cup of coconut milk. Many reviewers said it was too bland. That was not my complaint. The pie was way too sweet. Canned coconut comes in heavy syrup. I don't think that it needed and additional 3/4 cup of sugar. Plus the consistancy was too rich. Did not go over well in my family.
