I served this at Thanksgiving and it got rave reviews. It's light and tasty. For me the garlic was a little overwhelming so next time I will use less. Overall it was great and very easy!

Excellent!! Big bold flavors in this soup. I followed the recipe, well except for all of the salt, exactly. I really love how it shaped up in the end with the cream. My husband loved it too.

Was looking for an onion soup recipe and thought I would try something different. Wow! If you love onions and garlic then you will love this soup. Ended up having to substitute beef broth for the chicken broth in the second half (the 4 cups) of this recipe (sorry Emeril). It still turned out wonderful and the picky men at my house loved it. Served it with salad and french bread. Perfect.

Although I can not honestly rate this recipe as written (I had to make some substitutions and cut back on some seasoning quantities), it wasn't a five. I like spicey food and the flavor was great. I enjoyed dipping bread in the soup. However, the color wasn't appealing and the aroma lingered a little too long for anyone in range. My fiancee threw the leftovers away...

The soup base is so good. Surprisingly the garlic is not the first thing you taste. The only problem is that it calls for additional salt which makes it way too salty. Next time I'll just let the broth do the salting!
