I had the recipe in my file for a number of months. I am a star with my husband who loves lamb. I only used one rack for two people. It was easy and such an elegant special meal. It was a great hit with everyone! They couldn't stop talking about how tasty it was. It did turn out a little rare for 3 of the 4 diners, but we just cooked a little longer for them, and all was well. We served this dish with mashed potatoes and fresh green beans. We cooked it for an additional 10 minutes and it was still rare and lovely. This also allowed the persillade crust to brown a bit more on the rack. Served with fennel salad and a creamy risotto.
