Easy to prepare, I made the potatoes several hours in advance. The fennel adds a nice flavor that goes perfectly with the cheese. I heated the cream and mixed in the shredded cheese to create a smooth sauce and poured it over the potatoes. This prevents the cream and cheese from forming 'glops' amongst the potatoes. In this gratin it was wonderful. In terms of ingredients, I followed the recipe and think that Gruyere is a must.
