I loved the peach, but I guess i didn't strain the blueberries too well, because i ended up with a lot of little blueberry chunks. I think ill try the mango next time. I probably wouldn't do blueberry again - it was too sweet, but the others were fantastic and all of the colors were so pretty. Sparkling apple cider worked well for those who preferred an alternative to Prosecco. You could probably make the purees and freeze them (with a layer of plastic wrap across the top to prevent any freezer burn) and thaw in the fridge when ready to use. I used fresh berrys and let them make a syrup of their own. I smooshed the berrys with ither a electric beater (beater) or a wire wisk then let them sit in 1/4 to a little more of sugar to make their own syrup. Then used the simple syrup as directed. Also to strain I used one of the strainers that has a rotating knob on the side and it made it SOOOO much easier, u might get a few seeds from the rasp. but you wont be able to tell the difference since most of the seeds come out in the sifter and you can enjoy the blue berrys using a sifter :) I used champ. as well and a good dessert fizzy wine, wow. This was great. For those of you who have access to Trader Joe's, they stock jars of apricot, peach, mango and marionberry sauce. Just buzz in the blender, and perhaps thin out a bit. Doesn't mix so completely with the wine as does cassis, but that didn't stop the guests from refilling their glasses. The blueberry was a bit too thick and quite sweet, but with a really dry champagne it worked well. I thinned it out with some of the simple syrup. Just plain water probably would have been good too. The purees were easy enough to make, but I would definitely strain the blueberry through some cheese cloth as my fine strainer wasn't fine enough and bluberry Bellini had little pieces of blueberry skin floating around. The peach and the raspberry were perfect and worked well together too! The only thing I would caution people on is straining the fruit puree.
