But taste the dressing before you put it on the whole salad because I think it's terrible. Threw it away. I used and olive oil vinagrette instead and it was wonderful! Followed the recipe to a "T" and what a disappointment! My son summed it up best when he took a bite and said, "You brought home those beautiful rotisserie chickens and THIS is what you turned them into???" The chicken salad had absolutely no discernible flavor, even though I used high-end olive oil and good quality red wine vinegar to make the dressing. You know it's a bad one when the husband asks you get out some crushed red pepper flakes so he could give it a flavor boost in some way! I won't make this again. Sorry, Giada. The only alterations I made was instead of roasted peppers, I used fresh bell peppers. I sauteed them in olive oil, when softened, I removed from pan and patted off excess oil. You could also make it from left overs if you needed to use them up. I roasted my own peppers which added a little time to the cooking process but was worth it. I also made less than the recipe called for and it reduced really easily. I will make this again.. Go to the Italian market and pick up small phillo dough cups.These cups make an excellent presentation and allows the sald to be finger food. Bake the cups according to the directions on the box and fill with the chicken salad. Because the phillo dough absorbs the dressing I add alittle more honey. Also, I only pour 1/3 of the dressing onto the salad , let it sit in the refrig and add more to taste. Having the salad in the lettuce would mean fewer calories. I made it for a visit from my boyfriend's family....they all loved it! I poached my own chicken breasts in onion and garlic rather than use the rotisserie chicken (save $$$) and it was just as moist and flavorful. I omitted the capers and used grated parmesan and served it with crusty italian bread and a caprese salad. It was wonderful, they all think I am a great cook. Thanks Giada!! I bought eight large chicken breast halves with skin and bone and roasted them rubbed with olive oil, salt and pepper. When cool, removed skin and bones and shredded. The combinations of textures, tastes, aromas and colors in this salad are very appealing to all the senses. It's not too sharp or vinegary and has an almost undetectable hint of sweetness from the honey and roasted peppers. This recipe is perfect. I love the departure from the traditional mayonnaise base by using an olive oil-based vinaigrette. I actually made mine with Giada's Basil Vinaigrette instead of the Red Wine Vinaigrette called for (I had it on hand from her Orange and Arugula Salad) and it went very nicely. I also omitted the flat-leaf parsley because I didn't have any on hand. In an effort to make mine a bit lighter, I used about 1/2 of the dressing called for and it was still delicious. The roasted red and yellow peppers add delicious flavor and lots of nutrients, but I have to say the roasted almonds were my favorite part--the roasting really intensifies their flavor and lends a wonderful crunch. It made enough for a lunch for 3 people. It was great. I didn't measure exactly anything. I used green onions and didn't have capers. Make the dressing. It is awesome. I believe it is the same dressing Giada uses on her Italian Antipasto Salad and I had it leftover. Make the whole recipe of dressing because you will love it on any salad. I make it during my kids sport season, so we can have healthy yummy food instead of snack bar nachos or burgers. It's also great on croissant rolls for a heartier meal. My reccomendation would be to shred the chicken while it's hot if you cannot make the recipe right away. It falls off the bone saving you time later if it goes into fridge.
