I had to double the recipe as I had more guests. I bought good ginger ale-Vernor's. Followed exactly and they were like chinese veggies, crisp. We like our veggies either raw or fully cooked so I cooked them till softer. No glaze happened, I added brown sugar at the end to try and help make glaze. Listened to others and tried the curry instead of chili powder. All in all we thought they were very tasty with a few minor adjustments for cooking times.

Simple to make and very tasty! The first time I made these discovered I had no ginger ale, so I used 7 Up and a tsp of powdered ginger. This seemed to give them even more zing than the original recipe - a plus for my family.

Thank you for helping me rediscover carrots. I read the other reviews and took the tip to replace the chili with curry. It made for a very tasty side dish of carrots that everyone at the table enjoyed.

I doubled this recipe, and it took a lot longer to boil off the liquid. When it was done, we thought it was just "okay." My husband, who doesn't like sweet things, thought I needed to add some sugar to the next batch. I thought they were a little too bland. Maybe I'll try some of the others' suggestions for 7up or curry powder instead and add some more ginger next time.

Have made this several times with different spices and liquids (chicken broth and brown sugar is excellent instead of ginger ale if you don't have it on hand). It always turns out great. Such an easy dish to make and so good!

This recipie is a favorite of my boys (aged 5 and 3.) They're picky eaters and usually avoid vegetables at all costs. In my house they call them "carrot chips" and if they're on the dinner table the boys are happy.

I've cooked this a few times, and really like it. Bagged mini carrots work great, and save time. I've always used curry instead of chili powder, 'cause I love curry. Good, new way to cook one of my favorite veggies.

My brother and I love this recipe. He asks me to make this all the time. You might as well make a double batch: The flavors are even better the next day. Leftovers (if there are any) microwave very nicely. Love it!!

I used sea salt instead of the kosher salt. Big mistake. I think next time I will use regular salt. I will also turn down my burners a little next time. Other wise this recipe was great.

This was great, and I think I might try it with curry powder once, just to see how that is. I doubled the recipe, and I am glad I had watched the show to see how it should end up, because it took almost 4 times as long as suggested to get it turned into a glaze, but worth every minute!

This is a great recipe - easy to make, only takes a single pan, and the resulting carrots are fabulous. We made this for Easter dinner, and it was a big hit with everyone. We will definitely be making these again! BTW, I watched the episode specifically to double-check the recipe as printed on the website, and chili powder is correct! I like the very subtle heat it adds.

I've never enjoyed cooked carrots before but I trust Alton so I gave this recipe a try. It is amazing! His recipe completely changed my mind. I recommend using a one pound bag of baby carrots, especially if you like them a little crunchy.

It's surprising how simple and delicious this recipe this. The ginger ale adds delicate flavor that enhanced the carrots. It's definitely going to be a permanent addition to my cuisine. I'm going to the grocer now to stock up on good quality ginger ale so I always have it on hand!

I found I needed to let the ginger ale reduce more. I also added about 2 Tbsp more of butter. I didn't have any chili powder, so I used a sprinkle of cayenne, delicious.

These were very good. Mine turned out very mildly flavored, I usually prefer more strongly flavored dishes and my sauce didn't really turn into what I would call a glaze but I am not a professional chef, what do I know.

I was amazed at this recipie (I am eating it now as I am writing this). Alton - you knocked this one out of the park! I made the carrots as directed, with the following variation: In an effort to get more healthy foods in my body, I used both orange and yellow carrots as well as a nice sweet potato. I made sure to use a very good gingerale (Reeds is my favorite - the honey taste is awesome). I could eat this for dinner all by itself! The sweet-salty flavors, with the kick of chili powder are so perfect with the root veggies. There is a bit of carmelization in the pan that has a super intense flavor - don't burn your tounge licking the pot! :) Thanks for a great culinary delight!

Very good recipe with one alteration. During the show the recipe included Curry Powder instead of Chili Powder as listed in the ingredients on the web-site. Simply substituting curry powder for chili powder gives the carrots a slightly spicy but sweet flavor.

Well to be honest,,I am still not sure if I like this recipe well enought to try it again. I agree with a couple of the other reviews..if you like sweet you will love it. I simmered the carrots until I could stick a fork in them, and they still were not tender enough by the time the glaze was finished. If I try it again I will simmer them until tender. The flavor was great. I was a little skeptical while I was cooking them,,they just didnt smell like carrots. If you like sweet potatoes,,which Im not crazy about, you will probably love these carrots.

Try these carrots guys! The only thing I did different is halfed the chili powder and added the other half with Curry powder. Use the Ginger Ale to bubble (cook) the carrots, you will love them! If you have some Ginger Ale left over, pour it over some ice cubes and whiskey and watch your carrots cook! Awesome carrots Alton!!

Next time I will replace Ginger Ale with chicken stock or 7 up. I have never tried Ginger Ale (I am foreign), and using it for the first time in this recipe was a big surprise. But I love the idea of cooked carrots with glazing.

These carrots were not only easy to make, but they were a huge hit at the dinner table. I have made them many times already. The first time, I did not have chili powder, so like another reviewer did, I used curry powder. The next time I did buy the chili powder, but I think my family all aggreed it tasted better with the curry powder. And that is coming from 3 "curry haters". Try this recipe, you wont be disappointed.

We loved this recipe! I was a little concerned about the chile powder, so I halved the amount called for in the recipe. It was perfect for us. Added a little heat to the sweetness. I didn't have any fresh parsley, so I tried using dried -- tasted great. Really easy recipe! I'll try the baby carrots next time since everyone seems to think they work fine...

Using good quality (AKA real) ginger ale really makes a difference. Also, instead of chili powder, I use chili flakes (of which I have a multitude of packages from ordering pizza). Combined with the ginger, that gives the carrots a nice spicy kick. May pack too much of a punch for kids!

I never thought of ginger and chile together, but for us it really works well. I live above 7000 feet so I had to let mine boil a little while longer to get it to the glazed point. I expected this to have a slightly sweet, gingery taste and it didn't. It wasn't bad, but it really didn't taste any different than plain, steamed carrots. Perhaps I should try it again with a different ginger ale. I thought the brand I used had a nice flavor, but it didn't come through in this recipe.
