I had all the ingredients on hand, so I decided to make an easy dinner of soup and grilled cheese. I was a little reluctant because I have horrible memories of Campbell's tomato soup from my childhood. Yuck. But this was nothing like that. Delicious. I will definitely make it again. It has a rich, deep flavor and was a huge hit with many people asking for the recipe. I was able to make it ahead - which actually enhances the flavors, I think. The only problem was that I had to quintuple the recipe since the basic recipe only serves 4, but it was easy enough to do. Thank you, Michael. I used 3 TB of 1/2 and 1/2. You could easily skip it for a VERY low fat soup. I also only used 1 TB of butter and probably 3 TB of EVOO total. I didn't have the larger canned tomatoes, so used crushed. Worked great - I didn't roast, though since they were soupy. I throw in about 5 fat cloves of garlic in with the tomatoes to roast..and I roast them a little longer. I also use less olive oil..just a drizzle. When I add in the chicken broth, I also add a tablespoon of tomato paste, a pinch of cayanne pepper, and a teaspoon of smoked paprika.Everyone loves this. I even biol some macaroni noodles separately and add them to the soup for my very little ones, and they love it! The recipe is small, so I usually triple or quadruple it, so that we have left overs. I puree the soup in a blender in batches and it comes out nice and smooth. This was very easy to make. I followed the recipe with the exception of using vegetable broth instead of chicken ( I had a friend that is a vegetarian joining us for dinner :)The other substitution was I used whole milk instead of heavy cream. I also used my blender to carefully blend cooked veggies and tomatoes before adding the broth. No need for an immersion blender if you don't have one. Can't say enough about this. Thanks! This weekend I made this for 80 people for our sailing club social awards social and it was a huge hit! A few variation made were: Fresh basil was not cost friendly for this huge group so to give it kick, I added dry sherry and a touch of cayenne pepper. Seems strange but was really good. Cost & Time Tip: Used whole canned tomatoes and roasted them on big sheet cake pans to save time. Transport tip: Follow recipe up to the stock and cream. Transported in stock pots then added stock and cream and brought to temp at the club. Taste tip: Read a all the reviews. Unfortunately, the results were less than good. I followed the instructions to the letter, with the exception of using much less olive oil than the recipe called for. I actually let the soup simmer for about 40 minutes before pulling out my immersion blender, but the texture did not end up smooth. It was very grainy and there was not much flavor. I'd say that it needed more salt but that's because I enjoy a more salty 'zing' to my soups. It seems to bring out more of the flavor with more salt. I only had seasoned diced tomatoes so I used one can with roasted garlic and another can with basil and onions. After sauteing the onion and placing the roasted veggies in my stock pot I decided that it was not going to make enough so I added a can of tomato sauce and extra garlic powder and seasonings. I simmered the soup for about 30 minutes and then ran through my blender, after blending I added the cream (I think it does need the cream as to me it had a little bit of a bitter aftertaste before it was added) and let it simmer for another 10 minutes or so.....it was so good. I sauteed the veggies in 1 tbsbp extra vergin olive oil, and drizzled 1 tbsbp of it on the tomatoes instead of the ton of olive oil the recipe called for. I also used fat-free half and half, instead of whole cream, but I did keep the butter at a wicked 2 tbsp for the flavor. In fact, I seriously considered keeping this recipe "chunky" instead of using the immersion blender, because it WAS SO good just like that, even without adding the rest of the ingredients. Using the immersion blender, and then adding the fresh basil and fat free half and half just added to the yummy goodness. I HIGHLY recommend this soup to anyone who loves tomato soup, or even to those who don't. My hubby doesn't like tomato soup that much, and he had three bowls of this tonight.
