This was a nice change from the usual round steak. It was unique enough in flavor and presentation to make my husband think he missed a special occassion.

I love all the ingredients in this dish and was very excited about the recipe. I was disappointed with the result, though. 1 cup of balsamic is way too much and I would reduce it to a quarter of that next time. There was way too much sauce for the amount of meat and it was very runny. The pea-whipped potatoes tasted good, but were again too runny. I don't want to give up on this meal, but there is a lot of work ahead of me to get to the point where I can enjoy it.

It is a simple recipe to make. We loved it and I would make it as a company dinner. The only change is the balsamic vinegar. It gave the dish a sweet taste which we did not think necessary. I will substitute a red wine.

I'm sure it was probably something I did, but this has way too much vinegar. Perhaps, the recipe should include tips on how to reduce the acidy flavor.

My husband and I really enjoyed this dish BUT I found it too salty. In actually watching the episode, I see Michael uses chicken broth. I'm not quite sure why so many recipes are different when put on the website. I will make this adjustment the next time and use low sodium chicken broth which I believe will take care of the salt issue. I did only use 1/2 the bslsamic and that seemed like enough.

This recipe was very good, way better than any froxen tv dinner salisbury steak. I was not sure of all the balsamic vinegar in the recipe, but suprisingly it was very good and made the steak tender. I used cube steaks, it they were very tender and flavorful.

I always get raves on my cooking and can usually get a good handle on what something's going to taste like by just reading the recipe but I was very disappointed in this dish. I also cut the amount of vinegar in half. The sauce was dark and murky and didn't look appetizing at all and there was too much of it. Sad to say, I ended up feeding it to the garbage disposal.

This sure isn't Stouffer's Salisbury Steak! Even though I find the prep a little time consuming, this is an excellent recipe. I read the reviews about the balsamic vinegar before and reduced it to about half as much. I also used portobello mushrooms. My only question is that why didn't Michael just recommend buying cubed steak at the supermarket, which is way more convenient. Also tried this recipe with cubed turkey, but used turkey stock, white wine or rice vinegar instead of balsamic and no mushrooms.

If you don't like balsamic vinegar, you probably won't like this recipe. I, however, love balsamic vinegar. I am on a low carb diet and make this for myself at least once a month. My husband LOVES it. I do omit the carrots, though.

Unless you like to drink your balsmic straight out of the bottle, you need to lower this to no more than 1/2 cup. I lowered it to 1/3 cup and it was still very strong. .

This is plain and simply a good recipe-much like our chicken fried steak here in the south (but more complex!) I used less vinegar because of some of the posts- wish I hadn't. Both vinegar and stock need to be reduced as stated in recipe- b. vinegar yeilds a tangy sweet richness -not sour- when reduced enough. Takes a little time, ya'll!

This is my first Chiarello recipe and I was duly impressed with it! What a way to transform cube steak! I halved the recipe and also used only 1/3 cup instead of 1/2 cup of balsamic as per everyone elses suggestions and it was incredible. Will definately make again! Thanks!

We had this for dinner last night and thought it was tasty, but a bit too much like meatloaf. I liked the chunkiness of the sauce--if I make it again will add an extra 8 oz. of mushrooms because they come out so caramelized and good. I only used 1/3c. of the balsamic, it could definitely use more for better tanginess. Next time I will use closer to the full amount.

A whole new take on cube steak. I always avoided this cut of meat because I never liked it growing up. Well, this is absolutely delicious & so easy to make. I used button & baby portabello mushrooms, and thanks to the advice in other reviews, I reduced the balsamic vinegar to 1/3 cup (next time I'll use only 1/4 cup). I can't imagine how it would have tasted with an entire cup of the balsamic vinegar. Instead of baking mine for one hour, I left it on the stovetop to simmer for one hour. It turned out so tender, we didn't even need knives - we could truly cut it with a fork. This is definitely a recipe I'll fix again. And it's not your mom's cube steak!

My whole family enjoyed this recipe, even my picky teenager. The next time I prepare this I will only use 1/3 cup of vinegar it was a bit overwhelming. The meat was very tender and the vegi's were tasty.

Very tender steak. We cut it with are forks! My kids said the potatoes were the bomb. I think they were very tasty. My wife hates peas, but with the preparation of the potatoes, by the letter, she even said they were good! The only thing I'm going to do different the next time I make the meal, and there will be a next time, is use only 1/2 cup of vinegar instead of 1 cup. I feel 1 cup was a bit much. Very good.

For some reason, I cannot get past the way the peas combined w/the potatoes. I did not find this tasty at all, nor did my family. The gravy would've been better w/out vinegar IMO.

I really enjoyed this recipe-I used cubed steaks. I used 1/3 C vinegar, only because my husband isn't a huge fan of Italian anything! It came out pretty well. He actually said it was tender & extremely tasty. I also have your Napa Style grill pan & I LOVE IT!! Thanks, Michael!

This is the best ever! About meat, used cubed steak from local supermarket. About reduction of broth, took the advice of previous reviewer and made that the first step. Also quartered mushrooms (buttons only) and diced onion way ahead. Used baby carrots, so no chopping. About balsamic vinegar, used just a sprinkle, 1/4 c. or less. Everything takes longer than the recipe states. I put all veggies in at the same time and all worked beautifully.....Killer!

1 cup of vinegar is too much. Half a cup would be fine. There's encough sauce for 8 cube steaks, not just 4. Otherwise, I enjoyed the meal.

I made the Salisbury Steak and I chose not to put in the vinegar. Glad I didn't do it because it would of been worse. The heat on the directions is 300 degrees my meat was not done on time. Sorry Michael this one was not a good one for us.

My husband walked in the door and immediately wanted to know what was cooking. Although I had to adjust a couple of ingredients, based on what I had in the cupboard, I was a super-star at this meal. The meat was tender and the gravy was tangy. The balsalmic and mushrooms were a hit, my 12- and 5-year old cleaned their plates. This dish has made it to our "I want 'that' for dinner" list.

My family loved it! Definately a keeper. The meat was perfect, so tender! Next time I will make the first step of this recipe to be to get the broth reducing, as it took quite a while to reduce to half. I won't preheat the oven until the broth is just about reduced. Then I'll begin browning the meat second. I thought the sauce was strong on the balsamic vinegar, but my husband and teenagers thought it was excellent using the full cup and don't want me to reduce the amount. Using the cube steak was both very inexpensive and convenient. We loved it even more than some of the more expensive cuts of steak. Will definately be making this again! Thank you!

I liked everything about this recipe, except next time I use it, I think I'll cut back the balsamic by half. The vinegar kind of overwhelmed the rest of the flavors, and it was almost as if the steaks were being roasted in A-1 Sauce.

the sauce was way too thin and way too much of it. I think I'll reduce all the liquids by half next time. I only made the steaks. Mashed potatoes and peas just don't quite appeal to me.

I have made this several times now for my family and for company. I buy the steaks already cubed and I use only 1/3 to 1/2 cup of the balsamic vinegar. This makes a tremendous amount of delicious gravy to pour over the steaks and mashed potatoes when done. I do not use the pea whipped potatoes but I always serve this with my own whipped potatoes. Delicious.

I used the sauce recipe to accompany some sirloin steaks for our New Year's Eve dinner party. It was a hit! So many great compliments on the sauce. I served the steaks with ratatouille and red roasted baby potatoes. A heavy, but wonderful meal!
