Then I followed the rest of this recipe. The buttermilk makes the chicken almost melt in your mouth. Baking made the chicken much less greasy. My family said it was the best fried chicken I've ever served them. You must remeber though that Ina states that she prefers it 'Simple" in this episode. If you really want to taste the spices you have to add a lot to both the buttermilk and flour. It took two tries for me the first being good but a bit bland. After following another reviewers suggestion I added salt, garlic and paprika to the buttemilk and marinated it over night. I also heavily spiced the flour with Lawreys salt, Lawreys garlic powder, and cayanne pepper. It came out excellently - packed full of flavor. Having your oil at 360 is a must to get proper browning and to stop crust from falling off - take your oil to 380 the first batch - you will see it drops significantly. Best of all you can have a large gathering and the chicken all comes out at the same time. I actually used boneless/skinless chicken breasts for this recipe and added some Tony Chachere's to the buttermilk along with a couple of cloves of sliced garlic. Then when I started to batter the chicken I also added some Tony Chachere's to the flour mixture. This made for a little bit of a kick to the breading. I changed the method of making this chicken. First, i used Emeril's method(EM0714) of Seasoning the chicken by putting his Essence in the buttermilk and letting the chicken marinade in the buttermilk for 24hrs, and taking it out of the refrigerator 4hrs before cooking it, along with putting Emeril's Essence in the flour. But, i used Barefoot Contessa's method of cooking this chicken. I took the advice of some of the previous reviews and added salt, paprika, pepper and crushed garlic to my buttermilk marinade. Wow de wow what great flavors. Super messy with breading chicken in the flour will use a paper bag next time. Highly recommend placing chicken on a metal rack after frying to get rid of some of the excess grease before baking in the oven. In fact, it was the meal of choice every Sunday for many years, because the chicken could be cooking while the family was at church. She never soaked her chicken, and instead of deep-frying, she coated the chicken in seasoned flour and browned it in a skillet. Then she slow cooked it in the oven in a greased, heavy aluminum, covered roaster pan. She didn't always leave the skin on the chicken, and the coating wasn't 'crispy'... but the flavor and moist, tenderness couldn't be beat. Everybody said the chicken was tender and juicy. I left it overnight just like the recipe said, but I just added seasoned salt and complete seasoning to the chicken. Even though you do fried the chicken, I do not think is deep fried. I left it only 3 minutes on each side and then took them out. The oven did the rest of the cooking. I also agree with another review that said,"This IS fried chicken". How is it not fried chicken? You're frying it until it is browned. Anyway, I like it. In this recipe that can accomplished by desolving a generous 1/2 cup of kosher salt and 1 T sugar in the buttermilk. Of course adding 1 T of paprika and a couple of cloves of garlic (pasted)to the buttermilk brine makes it the perfect vehicle for delivering a perfectly seasoned piece of chicken. Another advantage to brining the chicken is that it can be done in 2 to 3 hours and should not be done overnight, plus you don't have to season the flour. Also, only one chicken for this amount of brine. Once properly seasoned, the method is on the money. We watched this episode one Sat. and decided to givie it a try. I managed to get through cutting the chicken and flashbacks as a kid watching my Grandmother do it. Somehow something went wrong and I'm still not sure what happened, but the flour didn't stick to the chicken as it was frying and I had a big mess by the end of it. I may try again at some point , but for me, I'll stick to Paula Deen and Rachel Ray. Go girls. |
