I found this Apple Pie to be the best I've ever made and/or tasted. The crust is simple to make and easy to work with. Unlike many reviewers, I found the filling to be perfect with an enjoyable citrus "accent". As a nod to Grandma, I did add about a cup of yellow raisins to the filling. They add a perfect balance to the citrus and tart apples. My guests loved it and I'll be adding this to my "regular" list. Ina has done it, yet again!

Crust was great! It's easy to make and very flaky, but I was little disappointed for the tast of filling. It didn't go mushy, but it's just so citrusy and lemony. Granny Smith itself is very tart taste, so I wish I could have more sugar in and less zest. My husband and I couldn't eat a piece of pie without ice cream!!

I've been baking for many years, and I've tried dozens of pie recipes, and even more failed crusts. A friend's husband brought this pie to a recent dinner, and I thought: If he can this, I'll give it a whirl. The results: Unbelievable!!! I've made it twice in two days and each time it came out absolutely perfect. Even if you don't make this particular pie, you HAVE to try to crust recipe. It's easy, rolls out flawlessly, and bakes up like you bought the darn thing at a bakery. I'm completely hooked!

I made this for thanksgiving and everyone loved it. I made it with braeburn apples and followed the recipe exactly. Don't have a food processor so made the crust by hand; it was very easy to work with and really yummy. I am going to make it again for Christmas due to popular demand!!

I used this crust for a pecan pie and I can't tell you how much I love it. It rolled out easily, fit in the pan perfectly and baked up tender and flaky. I was terrified of making crust from scratch until this recipe. Ina does it again!!!

I was looking for an apple pie recipe with that SOMETHING to make it unique. I was surrounded by my cookbook collection, searching, and turned to Ina, who never disappoints on simplicity, authenticity, and flavor. I normally slice my apples lengthwise; so the chunkier cut worked beautifully with the Rome apples I used; and I sprinkled the top crust with cinnamon sugar, which left a glorious color after baking.The citrus gave this pie an edge that was refreshing,and superb. Even on Thanksgiving, family was coming back for thirds!!!

I am a new wife and mom have been using store bought crust because none of the ones I made were worth the work. I decided I would try one last time..this recipe made the BEST APPLE PIE I have ever had and pies have always been homemade in my family. This pie was no where near as excellent as all the other recipes that I've tried from Ina. This pie tasted so much like lemon and orange you couldn't even tell it was supposed to be apple pie. The only reason this received two stars instead of one is because the crust was very good. I actually had to throw the pie away because no one would eat it. Save yourself the trouble and wasted expense and try Betty Crocker's apple pie.

I love Barefoot Contessa and Ina's recipes have always come through for me, until now. The crust is very good, easy to make and work with. The filling was awful. After reading the reviews I cut way back on the zest and juice, just a little of each. I doubled up on the cinnamon. I cooked the pie for an hour and the filling was mushy, no texture at all. The flavor was not good. Way too citrusy and the spice flavor was undectable.

This was the first time I have ever baked a homemade pie from scratch, I was quite nervous i'll tell ya. I followed the recipe precisely and it turned out well. As soon as it was done baking I brought it to my in laws for them to try. My father in law and mother in law loved it! My husband commented maybe more cinnamon but also loved it. Personally, I think yes more cinnamon, and use real butter (i only had margerine on hand). Other than that my first pie was a hit! Just an FYI... i have a brand new oven and it only took an hour at 400 degrees.

I was excited to try this recipe after having seen Ina make the pie. I have never been so dissapointed with a recipe in my life. The crust disentigrated around the filling as it baked, and never browned after an hour and 15 minutes in the oven. The apples were complete mush underneath the crumbling crust, and were extremely sour. I left out the zests and juices because, hey, its an apple pie. Apples don't need zest to taste good. The filling needs way more than 1/2 cup sugar if you are using Granny Smiths. I will definitely never, ever, EVER make this recipe again. I am going back to the recipe I learned in home ec when I was 15.

This pie was amazing!! I am a huge apple pie fan, although I don't make pies that often (I've never had much luck with crust). But this one was easy (even the crust!!), and it tasted fantastic. I've read some reviews that complained about it being too lemony. I suspect those people did not use enough apples. This pie should be piled HIGH with apples when it is made. It looks rustic and almost comical, but it is great!

My first attempt at a pie and the crust was fairly easy. I made a few changes by cutting out the zest and adding apple pie spice to the filling in place of allspice. Taste was very good, but would probably cut the filling to 1 Tbsp of lemon juice instead of 2. Also substituted Granny Smith apples with Cortlands.

Although all of my guests enjoyed the pie, it didn't quite meet my expectations. I prepared the recipe using the exact measurements, directions and cooking time. The apples were a little on the mushy side and my pie crust stuck to the plate. Otherwise, great flavor.

I couldn't believe how well my crust came out -- I have always had great difficulty with pie crust, but this was perfect. I made with just the orange juice, no zest and no lemon (zest or juice). I think the OJ really complements the spices.

This pie was by far the worst pie i've ever made, DO not put the lemon and orange peel in this pie, if it's not used it would probably be a delicious pie. It was horridly bitter, and I didn't use the white part of the orange or lemon. Way too much zest in this pie, pie crust was good.

- first, the crust is flawless; don't change a thing. - after reading the reviews, I added: 1/4 cup of light brown sugar, 1 full tsp. of cinnamon, a little less salt in the filling, sugar in the raw on the top crust and no zests of lemon or orange (just juice of one lemon to keep the apples from turning). This turned out to be the best apple pie ever! Apples weren't too tart/sweet, hard/soft...and they were tasty! Will keep this recipe forever!

After reading several comments, I decided to use a combination of Granny Smith, Fiji, Golden Delicious, and Gala apples. The combination made for interesting flavors and color variations. I used the lemon and orange peel as specified, and used all the orange juice and half the lemon juice specified. The orange flavor was a little present, so I think that next time I will use 1 tsp of lemon juice and a sprinkling of dried orange zest. I increased the sugar to 3/4 cup and could have gone to 1 cup. I might decrease the nutmeg slightly since I use freshly ground and possibly increase the cinnamon. The crust was very easy and good, but I didn't find it flaky. Maybe that had to do with our humidity with a tropical storm approaching. One of the people I served is a seasoned cook and said that he's never able to get crusts to come out like this. I took that as a compliment. Tip: Make the top crust a little larger since the apple filling piles so high.

I made this pie for my co-workers and they all loved it. This is now my standard recipe for apple pie with a few adjustments......1)I have always liked pie filling using various types of apples way better than a single type. It balances out the tartness/sweetness and also the texture. 2) I cut back on lemon juice (1 tabelspoon) and used a little less orange and lemon zest (based on reviews). FYI...Her pie crust recipe is a keeper. The shortening/butter combo makes it flaky and rich.

I've been baking with apples for a very long time and I have found Granny Smith apples to be wonderful for applesauce, but not good candidates for pies and cobblers. I love to use about 75% Braeburn or Gala apples for their firm flesh and sweetness, and 25% Fuji or Jonagold for their pleasant tartness. Stay away from Delicious apples, too, which are ok for eating out of hand, but not for cooking. I reduced the zest to just 1 tablespoon of lemon (skipped the orange zest), used the 2 tablespoons of lemon juice (skipped the orange juice) and reduced the salt to just 1/2 teaspoon each in the filling and in the crust. (I saw the program and she used TWO teaspoons in the filling! I love Ina, but I think she has a problem with salt; every recipe uses 2 teaspoons. Some foods taste better with just a hint of salt instead of allowing it to overwhelm the dish.) The result? Absolutely wonderful! The crust was very easy to work with, flaky and flavorful, too. The filling contained nice, firm apples loaded up to the top of the upper crust! And the sugar on the top crust (I used coarse sugar) added such an enticing sparkle! I highly recommend this recipe with the understanding that the variey of apple will make or break this pie. Learn the varieties in your region of the country. You'll love the results.

First of all, the crust like everyone said was very good -- no problems there. After reading many of the reviews I chose NOT to use all the zests she had on the recipe becaue the apples were tart enough. BUT, why did the apples turn to mush!! Is it because of over-baking??? I had a few apples that were still in tact on a part of the pie, but the majority of the applese turned to applesauce.... Any suggestions??

I agree with other reviewers that the citrus was a bit much. It didn't ruin the pie, it just made it taste a little too bright. The crust was fantastic and easy, and I even made it without benefit of a food processor. Next time I will reduce or omit altogether the citrus, and increase the spices. As is, it is still a very tasty pie.

This pie was the worst recipe that Ina has ever concocted. The extra large quantity of lemon, orange juice, and rind ruined the dish. The apples had no flavor of their own. Apples are not inexpensive ($6.55 for 4 lbs.). This was way too sour and eatable, had to throw the whole thing out. JoJo, Holliston

This was just ok. First of all I could not fit all of the filling into the crust. There was just too much filling. Also, there should be more cinnamon or nutmeg because all I could taste was the orange and lemon zests. Finally, Granny Smith apples may be a little too tart for an apple pie.

On what planet is one-half cup of sugar adequate for 4 pounds of granny smith apples? That's the right amount of sugar to mix with an equal amount of mixed apples in an apple crumb pie (which has sugar in the topping). And for depth of flavor, skip the citrus, which is a discordant element and mix your apple varieties-- grannies, mutsu's, empire, cortland. Ina-- you live in apple heaven, take advantage of nature's bounty. And the crust has too much water.

This is a delicious recipe!! I love hot apple pie with vanilla ice cream! mmmmm good!!! My mother gave me this recipe (she watches the food network all the time) and now I try to make it at home for me and my hubby and the in-laws (when they come over). Good deep dish apple pie, but does not quite come close to my Mom's deep dish or as she called it family size.

There are at least 8 inches of snow on the ground, but we're warm and cozy and eating the best apple pie we've ever tasted. Today I taught my 19mo. old daughter how to bake and we used this recipe- it came out perfectly! The crust was so easy to work with and baked to a even golden brown. Yummy-Even better warm w/ vanilla ice cream!

The crust was no problem, but I felt the Granny Smith apples were too tart for my taste and I like more cinnamon, not the citrus taste. All in all...my mom still makes a better crust and a much better apple pie. Sorry, Ina. Mom's rule!




I love Apple Pie...just not this one!

I normally really enjoy Ina's recpies, but my family didn't like this one at all. The apples went really mushy and it had a very sour taste to us.

We loved it and we didn't want to get out the food processesor so we did the pie dough in the kitchenaid and it worked great.
