The soup was alright.. not amazing like everyone makes it out to be. I've made leek and potato soup before without a recipee and it turned out much better. I think it would have more flavour with more leeks added, afterall the potato for the most part is just there to thicken the soup...gezz i sound like a a food critic. p.s alton brown rocks most of the time. peace

This is a great soup! The use of buttermilk adds really nice contrast. If you want to make it even fancier use a sieve to make it really smooth, the immersion blender doesn't get it silky smooth.

Simple, easy leek recipe - and versatile to fit with your family's eating habits - and a good one to introduce leeks to family; I substituted sweet potatoes for Yukon gold b/c it's what I had on hand, which added a little sweetness, and I added a little ground ginger & left out most of the cream (to keep it on the "fit" side) - family loved it. :)

I was searching for a great leek-potato soup as a first course for my St. Paddy's Day party. Many looked great, but when I spotted Alton's, I knew that I had found it. It did not disappoint! My guests RAVED about it and said they would have been content with it as a main course! It is easy to prepare, and the subtle but distinct ingredients marry together perfectly. I urge you to try it What a winner!!!!!!!!

I needed to use some leeks before they went soft. Picked this recipe at random (well, almost) and was pleased. The buttermilk adds a mild tang to the soup and I might be able to get my cold soup averse family to go for it this summer!!!

I made this recipe to represent the movie "Ratatouille" for an Oscar Party. The recipe provided on the published menu did not impress me. When I found this recipe I knew I had to try it and I was not disappointed at all. Fairly easy to make as well.

I used homemade chicken stock instead of vegetable stock, but other than that, I did everything exactly as the recipe said, and it was really, really fantastic. I'm the type of cook who will usually try to cut down on the amount of cream in a soup recipe, but go for the whole cup. The buttermilk is a stroke of genius and a perfect foil to the heaviness of the cream. And it is so easy to make - a definite keeper!

Whenever I am searching for a recipe on here, if I see on from Alton I always choose it. His recipes are the most consistently good in my experience and are usually pretty straightforward to make. This soup was delicious, I used half and half instead of cream and it was still plenty creamy.

Thanks for the yummy soup, Alton. I made it basically as indicated except I used chicken stock instead of vegetable. It was creamy with a slight tang. It's a keeper and so easy to make! Kitchen had wonderful aromy for hours after!

This was really good. Used chicken broth instead of veg. Was expecting a thicker soup - like ya get everywhere else. This soup was thinner, and was very pleastantly surprised. I did put back some potatoe for texture, but that had no play in the thickness, I believe. Gotta go get another bowl now...

i never follow a recipe to the letter. that's no fun. this was very good and very easy. after the leeks became good and tender, i turned up the heat a little and splashed some white wine in the pan. also added a little flour at this point and made a roux because i like my cream soups thick enough to scoop up with crusty bread. a little cayenne never hurt either. i've made several different leek and potato soups, but really enjoyed the buttermilk in this one. it's a nice touch.

My son's favorite soup of all time is potato soup. I wanted to try something different and I remembered having leek soup when I was growing up and loving it. I was glad to find this recipe because it brought two tasty soups together into one. My family thoroughly enjoyed eating this soup topped with bacon bits and with a nice fresh loaf of warm, crusty bread on the side.

This is my first time making leek potato soup and it came out fantastic. I served it for a dinner party, and it was so creamy (although I sub-ed half/half for cream) and the buttermilk gave it a very piquant flavor. I think I would cut down on the white pepper next time, but I think that's just my preference, not a big fan.

Having encountered a day when soup would hit the spot, and having some fresh leeks on hand, I tried this soup. I had to make a few substitutions but it turned out fantastic. I used skim milk instead of the cream, chicken stock instead of veg broth, and I only had about 1/3 cup of buttermilk to add. To bolster up the flavor, I put in a 1/4 cup of powdered milk. The soup was too creamy, I thought, after blending everything, so I cooked a few more potatoes and chunked them up into the soup. It was sooooo good!!! I have learned a lot from Alton, thanks for a great recipe.

very very tasty recipe, but i made a few modifications, for flavor and health. a cup of cream is an obscene amount of fat, much of which is saturated. i used 1/2 cup of 2% milk and 1/4 cup of cream, and added an extra splash of buttermilk. this was fine, flavorwise, though it may have resulted in a slightly?very slightly?thinner soup. also, i topped with thinly sliced scalllions and some crisply sauteed half-inch batons of prosciutto.

Excellent! This is a keeper. I used chicken broth instead of vegetable broth since that's what I had on hand. As other reviewers have noted, the soup is excellent even without the the cream and buttermilk added. I considered stopping there and serving it, but went ahead and added 3/4 c of each instead of the 1 cup as called for (it was all I had left of both.) I used a regular blender since I don't have an immersion blender. You'd think the result came from a restaurant - most impressive! My 9 year-old had two bowls.

This soup is great! It's fast and easy to make and perfect for warm or cool weather. One suggestion I would make is cutting the amount of buttermilk by half and cream by a quarter if you are going to be using this for a main dish. In small quantities the dairy is OK, but for a whole bowl-full it can be a little overpowering. For a real treat, buy or make a few sourdough bread bowls and eat the soup from those. It doesn't get any better!

This is the BEST potato soup recipe I've ever had. It mimics one of our favorite Irish Restaurant's (with the exception of adding irish bacon). I make it a lighter version and my family doesn't know the difference. Fantastic the next day chilled as well. Thanks for the GREAT eats!

This soup surprised me with it's incredible flavor and depth. Though not exactily low in carbs, I served this hearty soup in sourdough breadbowls. The two worked perfectly. I left a few of the potatoes out of the blender in order to give the soup a chunky texture. Try it! You'll love it!




Complex flavors - easy to build from

Because I can never leave anything alone, I tried a couple variations of this recipe all with pretty good results. Although the base recipe soup has some complex levels of flavor, it is easy to use this soup to build from as well: Variation 1 - to cut calories, use plain yogurt instead of whole cream and buttermilk. Results - Excellent cold. Still had the tang of the original, but much fewer calories. Seemed to loose a little hot, but still good. Variation 2 - Added bacon and tomato as one other reviewer did. Results - I used very meaty and thick slab bacon and some garden fresh tomatoes. This was my favorite variation. Variation 3 - South-western style. Added medium-hot diced peppers, diced tomato and cilantro instead of chives on top. Results - Definitely out of the ordinary! Tasted pretty good! Variation 4 - Added pre-soaked split peas, ham and tsp liquid smoke. Results - my favorite of the variations served hot and least favorite cold Variation 5 - reserved 1/2 potatoes and added 2 cups corn left over from corn on the cob and two cups cooked and diced chicken. Results - favored by my guests more than me who love chicken corn chowder. Much more filling variation - can be used as main course. Serve this one hot with fresh crusty italian bread!

My boyfriend lived in France this past semester and his host family made a leek and potato soup. Since today was a rainy day it was a perfect day for soup. He took one taste and it took him back to France! I have to say I was pretty impressed myself and I know we will be making this recipe over and over and over again. We did not use the buttermilk, instead used all heavy cream... and instead of vegetable broth, we used chicken broth...that's what his host family did. It was yummy! I am going to try it with the Buttermilk next time. Thanks, as always Alton, great recipe.

The buttermilk is the key, don't skimp on it, Disregard the other reviews about using a stick (emulsion) blender. My stick blender did the job nicely. No lumps. Haven't tried it cold so I can't help you there.

Leek Potato Soup is a wonderful recipe, good for a light lunch with salad and a crusty sourdough bread. It is really handy to make this up ahead, up to the point before the dairy goes in, and then finish it when we get home from work. We made this once for company and they all left with the instructions. Now we make it on a regular basis whenever leeks are in season. Thanks Alton!

I am a huge Alton fan (his "Once and Future Beans" are to die for) but I just watched this episode and he continually referred to this connoction as Vichyssoise which it is NOT. If you want the real thing please refer to the New York Times Cookbook (Craig Claiborne - 1961). Chef Diat's recipe calls for plain potatoes (not the Yukon Gold which are too waxy), chicken stock (not that veggie orange colored stuff in a box) plenty of milk and heavy cream and a topping of chopped chives. Always served chilled. And, oh by the way, a hand blender will never achieve the silky consistency this soup should have - a fine sieve is preferred or if you're to lazy then use a regular blender. Heaven on a spoon when done correctly. This may make a decent soup (although it's the color of something with liver disease) but don't be deceived - Vichyssoise it is not, nor will it ever be!!

I tried this soup and thought it was very good - but I wanted a little more tooth (I like a soup that gives you something to do while you're doing all that spoon work) and decided to add another half pound of leeks, a bit more salt to the sweat and not use the stick blender as you did during the show. Yum! Now that's Good Eats! A nice grind of black pepper and thick slice of Ciabatta (or any heavy, yeasty, doughy bread) makes a great accompaniment.

This was an awesome soup and so easy to prepare. I had read the reviews and did alter the recipe a bit -- double the potatoes and only pureed half the mix-we like it with chunks and cut diary in half. It was just so tasty it haunts you long after it is gone. Even better the next day.

I believe I've had leek potato soup before, but I don't recall it ever being this brilliant. So I made it over the holidays for my extended family (not a small deal, as my sister hosts family meals and cooks everything, and is pretty choosy). It was a big hit; my 10-year-old nephew, who is also pretty picky, snarfed it down and then snarfed another bowl. I felt so honored. Kudos, once again, to Mr. B for providing the toolkit - not just the recipe, but the inspiration.

This is a great recipe, and like someone else said, it was great before adding the cream and buttermilk, so save the calories if you want to. I also made the leek rings to garnish the soup, wonderful combination!

My daughter is a vegatarian. I was pleased to make this soup for her. However she stopped me after tasting it BEFORE I added the cream and buttermilk. Said she liked it just the way it was. SO, if you like a lighter version, cut back a bit on the salt and skip the dairy, it's still great!
