I make it ahead of time (for company) and then put it in the oven to finish it. I never use clarified butter and have substituted sour cream for the creme fraiche when I can't find it. It's still yummy. The sauce is lick the plate delicious and the morels - there is no substitute for - so don't even try. Morels are available at a "reasonable" price on Ebay, and Madeira is not expensive at all at Trader Joes. Worth every dime as it was far cheaper than dining out... I told her that it was "Chicken with Morels". She said it smelled sinfully fantastic, which I took as a great compliment. When dinner was served, everyone commented on how great the dish was. I did not change anything including the pricy morels. I have read other comments where the wine, Maderia, was thought to be too expensive. I disagree, finding it in my grocery store at just $3.99 a bottle. I also found it at Bev mo for $10.00 a bottle. This will be one of my very favorite recipes to make in the future. I did halve the recipe as it is just the two of us, but kept the same amount of sauce, as I like more if you need it for rice, etc. Since I totally lucked out and found dried morels on sale I splurged on a really good bottle of Madiera. It definitely made a difference in taste since the mushrooms soak up alot the ingredients. Next time (oh and there will be a next time) I will use light cream. I wouldn't normally serve chicken to guests, but this recipe gets ushered to the top of my list! Worth every penny though! Those who didn't use creme fraiche are missing out; sour cream is not the same taste or texture. Also morels are heavenly and I wouldn't substitute white mushrooms, no comparison. I did substitute brandy for the Madeira wine because I didn't want to buy a bottle and only use a cup of it. I had good brandy and it was fabulous. I also used just a little lemon juice so as not to fight with the brandy. However, next time, I might add chopped fresh flat leaf parsley at the end. I don't know though because I really loved this dish the most! I think it's the best thing I've ever made and I'm a pretty good cook! It just sounded like a great recipe and I totally trust Ina. Well, it was a grand success. I live in the middle of NYC and I didn't need to substitute any ingredient, though I was surprised at the price of the morels and the Madeira. But I always honor the original chef by not substituting on the first go around if at all possible. I did the whole thing as she suggested. It was grand. If there were a 10 star catagory, I would put this recipe in it. It is the best. My guests raved about it for days and gave me far more credit for my cooking skills than I deserve. Ina is the one who deserves this credit. I had the pleasure of seeing Ina and Jeffrey Garten a few days after the dinner party in a restaurant in Paris on Christmas Eve. I did not want to spend the big bucks on the morels and substituted with white button mushrooms instead. Also, I was gonna spend around $15 for the Madeira at a local liquor store and was told to buy the cheaper brands as it did not make a difference (so I spent about $5 for the bottle). Also, didn't have enough shallots at home and added some finely chopped onions as well. The chicken came out really good. I liked it very much. Had a restaurant quality to it. Call me lazy, but since the grocery was out of clarified butter I used Olive Oil to cook the chicken in on the stove top, wiped out the pan with paper towels and added 2 T. of butter to saute the shallot mixture in. I served this along with the Arugula with Parmesan salad (same show). The dressing could use a little work. Also included Sauteed Spinach with Anchovies, Garlic and a touch of truffle oil. Surprisingly, my husband loved it and he dislikes chicken. He said that we could have it again and again. We ate it two nights in a row. Unheard of in this household. The leftovers were just a great as the original meal. Thank you wonderful Contessa. I love this recipe.
