The best tip in this recipe is using the water from the beans to cook the rice. May I suggest that you add 1 or 2 poblano chiles as you cook the beans. This will add a little heat and a touch of needed personality to the black beans as well as the rice. In respect to adding the cilantro pesto to the rice and beans and tossing it, I would personally shy from doing this as Bobby had correctly stated on the show that the rice and beans will soak it up. It gets a little ugly if it sits for awhile, especially with next day left overs. I use a generous topping of the pesto as a last minute finish to the rice and beans. Overall, this is a great plate recipe that's not very difficult to prepare and won't break the bank!

I made this recipe over Memorial Day weekend for my family and nobody liked it, myself included. It looked really good when Bobby was cooking it on TV, but tasted awful when prepared at home. Plus, it took forever to make.

Unfortunately my husband threw out my beans that I was soaking so I had to use canned beans. I still used the liquid from the can (mixed with water) to cook the rice in and it still came out delicious! My mother-in-law loved it so much she called and asked me for the recipe! Strong cilantro flavor, so if you don't like cilantro decrase the pesto.

I tried this dish at Bolo and it was a fabulous side dish. Following the recipe at home...it was tasty but turned pretty gray and wasn't very appetizing looking.




Fabulous and easy, but you must add more flavor

I made this recipe and it was a great side dish with my own recipe for Caribbean spiced pork tenderloin (with brown sugar and cinnamon). However, you MUST make twice as much of the cilantro pesto as the recipe calls for. I had to make extra at the last minute for a dinner party because you could barely taste it. Also, use more garlic than he calls for (I added two more cloves), and you don't really need as much oil as he calls for. I added lemon juice too because it was tasting too oily. Instead of 3/4 c. of oil, I used 1/2c. and made up the rest with lemon juice. I also added one half de-seeded jalapeno pepper into the pesto because the dish didn't have any kick to it.
